Apple Crisp Gluten-free. My husband loves apple crisp. Before my husband, I never knew much or had an apple crisp. Previously, maybe I would purchase a box weekly from the supermarket. But, now I do enjoy making homemade apple crisp dessert regularly. Hence, the combination of brown sugar, apples, gluten-free oats, and butter is a delicious combination. Just thinking about these ingredients makes my mouth water. Without a doubt, I love the golden brown color of the dish. Therefore, the amazing crispy oats that go with the ice cream. 6 cup granny smith apple chunks

5 tsp fresh lemon juice

1/3 cup brown sugar

3/4 tsp cinnamon

1/4 tsp salt

2 tbsp cornstarch

Apple crisp toppings:

3/4 cup brown sugar

1/2 cup gluten-free oat flour

3/4 cup gluten-free rolled oats

1/4 tsp salt

2 tbsp coconut oil, melt

1/4 cup butter, melt

  1. Preheat the oven to 350 degrees F. Take a pan and spray with oil. Cut the granny smith apple to 6 cups chunk. Set aside.
  2. With a large bowl, add in lemon juice, brown sugar, cinnamon, salt and, cornstarch.
  3. In a separate bowl, add in brown sugar, oat flour, rolled oats, salt, coconut oil, and butter.
  4. Mix the apple with the apple crisp fillings.
  5. Spread the apple fillings in the baking pan. Finally, spread the apple crisp toppings above the apple chunks.
  6. Bake for 50 minutes.
  7. Let it cool.
  8. Serve with a scoop of vanilla ice cream.

For instance, the outer layer is made out of a pastry or biscuit with a gooey fruit center. Altogether, these irritable treats are like a cake. Therefore, who can resist these healthy snacks. Especially, not the children who has a never ending craving for treats.

Outer layer:

1/2 cup butter(soft)

1/4 cup sugar

1/4 cup brown sugar

large egg 1

orange juice 1 tbsp

vanilla extract 1 tsp

zest of 1/2 of an orange

1 cup brown rice flour

1/4 cup coconut flour

1/4 cup millet flour

1 tsp tapioca starch

1 tsp xantham gum

1/4 tsp salt

1/2 tsp baking powder

Filling:

dried figs 1 1/2 cup

1/3 cup water

zest of 1/2 of an orange

pinch of salt

1/2 cup cornstarch for rolling

Instructions:

For the dough

  1. With a medium size bowl, add soft butter and sugar. Also, blend it together.
  2. Then, add egg, orange juice, vanilla, and orange zest. Whisk together until mix together.
  3. Moreover, add in brown rice flour, coconut flour, millet flour, tapioca starch, xanthan gum, salt and baking powder. Stir.
  4. Finally, place the mixture in the refrigerator for an hour.

For the filling

  1. In addition, finely chop the figs. Furthermore, place the figs in a saucepan with water. Let it boil for 5-10minutes.
  2. For instance, pour the mixture in a processor. Also, add in orange zest and salt. The mixture should be smooth. Allow the mixture to cool.

Put together

  1. Turn on the oven to 375 degrees F. Hence, take a baking tray and lay down parchment paper. As well as, split the dough into four parts.
  2. Secondly, clean the table surface, sprinkle lots of cornstarch and rub the cornstarch on the rolling pin.
  3. Thus, place dough on sprinkle surface, roll dough into long and wide. 4 ” x 10″. Cut the edges to give a neater appearance.
  4. Soon, scoop the fig mixture on half of the dough and avoid the edges. Then, sprinkle cornstarch on the spatula to help flip the dough on to the other side of the dough. Press to seal the sides. Cut into 1.5 inches.
  5. Finally, place the fig snack on to bake tray.
  6. Consequently, bake for 12 – 15 minutes.
  7. Let it cool.

  • On the other hand, make sure the figs turn to puree without any chunks in it
  • Certainly, cook the fig mixture with lots of stirring to prevent from burning
  • cook fig mixture well to give a sweeter taste
  • Needs a lot of cornstarch to prevent the dough from sticking to anything or together
  • Fillings can be poured in a bag to be squeezed onto the dough or scooped onto the dough

3 tbsp coconut sugar

1 1/2 cup gluten-free flour

brown sugar 1/4 cup

unsalted butter 1/4 cup

molasses 1/4 & 1/8 cup

1 egg replacer or 1 egg (room temperature)

1/2 tsp cinnamon

dash of nutmeg

dash of clove

pinch of salt

Instructions:

  1. In a microwave, melt the butter.
  2. With a small bowl, add in sugar, egg replacer, and molasses. Afterward, do whisk together.
  3. Next, in another bowl add in flour, spice, and salt. Mix well.
  4. Wrap the top of the bowl, store in the fridge for 1/2 an hour. This will allow the dough to stay in shape while forming the balls.
  5. Preheat the oven to 390 degrees. Then, place the parchment paper on the baking tray.

3/4 cup white rice flour

Also, pumpkin puree in a cupcake or muffin. Minced cauliflower or broccoli in a sandwich loaf. And, why not shredded spinach in a muffin mixture. Along with the shredded spinach, there are also thinly sliced carrots or grated ones. There are many options to add more vegetables in the diet.

  1. In a large bowl, add in all the dry ingredients gluten-free flour, baking powder, and salt.
  2. With a small bowl, warm the butter. Then, add to the flour mixture. Mix.
  3. Next, crack the eggs into the big bowl. Combine together.
  4. Take a blender or food processor to pureed the frozen blueberries. Empty the puree berries into the large bowl. Stir
  5. Turn on the stove, when the stove is warm enough to add oil. Spread it around.
  6. Use a large spoon to scoop pancake batter into the pan. Let it cook for 3 – 5 minutes. And, then flip to the other side. Note: with the amount of water or fruit, the higher the water content. Higher chance the pancake will burn. Therefore, do keep an eye on the pancakes to prevent from burning. The pancake’s size is small good size for my children. This batter made about 10 small pancakes.

C and O love the blueberries pancakes. They had three each for breakfast and two each for after dinner. Of course, I am super excited my kids love the pancakes. These kids are super picky. No wonder people say kids can be the most difficult critic. Gluten-free pancakes can be eaten with blueberries on top with whipped cream. Or, some simple butter and syrup would be very tasty.   • 1/8 cup sugar

  • 2 tbsp. butter

  • 1 egg

  • 1 tsp apple cider

  • 1 cup warm milk (105 – 110 degrees)

Directions

  • Warm one cup of milk. The temperature of the liquid should be between 105 – 110 degrees. Set the timer for 10 minutes.
  • In a large bowl, add gluten-free flour, almond flour, xanthan gum, salt, and sugar.
  • Once the yeast is ready, pour in the yeast into the flour mixture. Mix.
  • With another bowl, warm butter, egg, apple cider vinegar, and 2 tsp of water. Stir.
  • Pour in the egg mixture with the flour mixture. Combine. There should be no clumps.
  • Take a cake pan, brush oil on it.
  • Furthermore, separate dough to an equal amount. Place the ball in a cake pan with one in the middle. Turn the oven to 200 degrees for proofing. After 30 seconds, turn off the oven. Wrap plastic wrap on the top and a warm towel on top.
  • Place pan in the oven for 35 – 45 minutes. Once done. Remove from the oven. Preheat the oven at 375 degrees. Remove the towel and plastic on the top.
  • Let the oven bake for 30 minutes.
  • Once done, allow the bake goods to cool.

  • 2 tbsp. cookie oil

  • 1 large egg

  • 1/4 tsp sea salt

  • 3 tbsp. maple syrup

  • 1 tsp vanilla extract

  • 1/2 tsp baking soda

  • 1/2 cup of chocolate chips

Directions

  • Firstly, preheat the oven to 375 degrees. In a baking tray, lined with parchment paper.
  • With a bowl, scoop in coconut oil. Then, add in the syrup. Blend together. Once done, crack an egg into the bowl
  • Finally, add in vanilla extract and mix together.
  • Use a separate bowl, mix in almond flour, baking soda, and salt.
  • Pour dry mixture into the wet mixtures. Therefore, add in the chocolate chips.
  • Take a spoon, scoop a big scoop into a baking sheet.
  • Afterward, bake for 8 minutes. Let cookie bake until golden brown. Allow it to cool.

Simple Gluten-free Bagel. A bagel can be challenging. I attempted bagels a couple of times without any success in the past. This time I am trying a recipe without yeast. Working with yeast can be difficult, yeast has to be between 105 – 110 degrees and not over. Therefore, there will not be yeast in this recipe. Just simple gluten-free ingredients.

Simple Gluten-free Bagel Recipe

Ingredients

  • 1 cup gluten-free flour

  • 1/2 tsp baking powder

  • 1/2 tsp salt

  • 3/4 cup plain yogurt

  • 1 egg

  • optional: sesame seeds

Directions

  • Turn on the oven. Set it at 375 degrees.
  • Use a medium to large bowl, add flour, baking powder, and salt. Mix together.
  • With the dry mixture, make a hole in the center. Scoop in the yogurt. In a separate bowl, whisk the egg. Then, add in the whisked eggs to the well in the dry mixture.
  • Start by folding. Spray a baking sheet or place parchment paper onto the pan. Take a spoon and scoop into a baking pan. Make a hole in the center.
  • Continue this until there is no more dough. Season with salt and pepper. Bake 25 – 28 minutes. Do check to prevent the bagel from burning or overcooking.
  • Lower the temperature to 350 degrees to bake the bagels. If you need additional baking, bake for another 10 – 15 minutes.

Or, there are many things to add to the batter to make it healthier or more nutritious. Do add Greek yogurt for a more moist waffle. Sprinkle some blended flax for more fiber. In fact, add in mashed banana or applesauce for a sweeter taste with natural sugar. Much less sugar in the batter, this will be a healthier breakfast.

  • 2 cup of gluten-free flour

  • 1 tbsp. sugar or honey

  • 1/4 tsp salt

  • 1/2 tsp vanilla extract

  • 1 3/4 non-dairy milk

  • 1/2 cup coconut oil

Directions

  • In a bowl, add the dry ingredients gluten-free flour, sugar, and salt. Mix to combine.
  • With another bowl, add all the wet ingredients vanilla extract, eggs, non-dairy milk, and coconut oil. Stir.
  • Pour the wet ingredients into the dry mixture. Whisk to the mixture together.
  • Take out a waffle maker. Spray or use a brush to apply oil on the surface.
  • Scoop batter into the waffle maker. Close the waffle maker. Once done. I like to flip the waffle to make it nice and crunchy. Note: this recipe makes 8 pieces.

If you are tired of the typical waffle, maybe it is time to be adventurous and to try different flavors. How about peanut butter with chocolate? By the way, if you are fond of chocolate do try it with grated orange. Furthermore, try a nutty waffle by using chickpea with an egg on top.
