Breakfast can be challenging to have more vegetables unless you add a vegetable smoothie or have omelets in the morning regularly. Without a doubt, do try to add some to bake goods. Zucchini Gluten-free Bread

Ingredients:

zucchini 1

gluten-free 1 1/2 cup

sugar 1/2 cup

eggs 2

butter 1/4

vanilla extract 2 tsp

baking soda 1 tsp

salt 1/2 tsp

cocoa powder 1/4 cup

chocolate chip 1/2 cup

Instructions:

  1. Preheat the oven to 350 degrees.
  2. Grate the zucchini. Remove the extra liquid with a cloth by squeezing the excess water.
  3. First, place eggs, sugar, butter, and vanilla extract in a large bowl. Stir to combine.
  4. Next, with another bowl, add the following gluten-free flour, baking soda, cocoa powder, and salt. Mix well.
  5. Combine together the first mixture with the second mixture.
  6. Once combined, add in the zucchini.
  7. Finally, add in the chocolate chips. Stir to combine.
  8. Spray the loaf pan. Pour in the batter.
  9. Do bake for one hour. Check the loaf with a toothpick to see if it is done.
  10. Once done, let it cool.

Adding Vegetable

Tips to add more vegetables to baked goods. Besides zucchini how about sweet potato which has a natural sweetness. Moreover, this can be mixed into the cookie batter. Also, pumpkin puree in a cupcake or muffin. Minced cauliflower or broccoli in a sandwich loaf. And, why not shredded spinach in a muffin mixture. Along with the shredded spinach, there are also thinly sliced carrots or grated ones. There are many options to add more vegetables in the diet.

I started making gluten-free bread due to my daughter. This started when my daughter became sensitive to gluten. In the past, I never made a loaf of bread until gluten-free bread. I didn’t know the basics of making a regular loaf of bread. I still struggle with the rise of the loaf. However, the tip that helped me is to set the oven at 200 degrees F for 30 seconds. Then, turn off the oven. Place the loaf in the oven for 30minutes. This helped me with a healthy soft loaf of bread.

There are four Types of Yeast

There are four types of yeast: dry, instant, fresh, and wild. The more common ones are dry and instant. Dry yeast has been ground to form into granules. The yeast is not active. Once activated it will eat the starch. How to activate the yeast. Mix yeast with water and sugar. Wait for 10 minutes. This becomes bubbly. And activated. Instant yeast can be activated by mixing up with dry ingredients.

Gluten is in wheat, barley, and rye. Flour is a protein in a resting stage. When the liquid is applied, it reacts. Need to be careful with gluten. Too much work on the dough will affect the texture.

Ingredients:

1 1/4 cup of milk

1/3 cup of old fashion oat

1 tbsp. honey

2 1/4 tsp quick rise yeast

3 tbsp. butter

2 cup bread flour

3/4 cup whole wheat flour

2 tbsp flax seed

1 tsp salt

2 tbsp sunflower seed

1 tbsp sesame seed

1 tbsp poppy seed

topping:

2 tbsp old fashion rolled oat

1 tbsp sunflower seed

Instruction:

  1. In a bowl, warm up milk to about 115 degrees F
  2. Add in oats, yeast, and honey. Let it sit for 5 minutes.
  3. Then, add butter. After butter, add in bread flour, whole wheat flour, flaxseed, and salt. Mix well.
  4. Do add sunflower seeds and sesame seeds. Mix together.
  5. Mix with the hand for 10minutes.
  6. Cover the dough. Let the dough rise for 60minutes.
  7. Once it reaches 60 minutes. Spray the loaf pan. Knead the dough.
  8. Cover loaf again with the towel. Allow the dough to rise for 60minutes.
  9. Once the dough reaches 60minutes. Turn on the oven to 350.
  10. You can add sesame seed and sunflower seeds on the top of the bread.
  11. Bake for 35minutes.
  12. Allow to cooling for 10 minutes.

My favorite meal is to have a lovely sandwich during lunchtime. Nothing like a soft loaf of bread. It is a lot of fun to make your sandwich bread. A slice of turkey, some spinach, slices of gooey cheese with a crunch from the toasted bread. You should try this healthy soft loaf of bread.

Gluten-Free Starting with Simple Baking. When I started learning about my daughter’s gluten-free sensitivity I decided to bake. A simple loaf of bread since I want to buy some ingredients to bake from scratch. I did buy a couple of different baking ingredients gluten-free flour, almond flour, cornmeal, etc. Then, I can make different things from French toast to a sandwich.

I found a very simple recipe. Unfortunately, once I mixed everything together and baked it the next day it gets crumbly. I couldn’t apply any types of spread on the bread. It was tough. I never knew without gluten it would make that big of a difference. And, the rice makes the bread crumbly. I attempted different recipes but they all seem to do the same thing. Maybe I need to try different types of flours. It was quite stressful how a simple loaf does not turn out the way I want it.

For now, I just buy my loaf from Costco they seem reasonable in price. I’ll attempt a loaf again at another time. At home, I mostly bake gluten-free breakfast items they really didn’t require non-crumbly texture or texture is not as important. I make banana chocolate chip muffin, banana loaf, pancake, cornbread, and quiche.

What I want to attempt the next time for gluten-free baking are blueberry breakfast oat bars. The recipe use gluten-free oats and gluten-free oat flour. I have never used oat flour before. It will be interesting to use something different.
