Coconut flour flatbread. It is challenging to find food my children love. Children can be very picky eaters. During the morning, my son does not eat much I want to have a healthy breakfast. In particular, I want to make quesadilla for him. First, I want to make a flatbread. Secondly, I can add either avocado and chicken or avocado with cheese.
Coconut flour flatbread
2 tbsp psyllium husk
1 cup lukewarm water
1/4 tsp baking soda
1/2c coconut flour
1 tbsp olive oil
1/4 tsp salt(optional)

Psyllium husk adds a crunch. Alternately, do reduce the amount of psyllium husk, chia seed or flax seed instead. Furthermore, use almond flour in the recipe to give more flavor. Undoubtedly, this nut flour gives a nutty flavor to the flatbread. Indeed, almond flour gives the flatbread a lovely brown or golden color. Besides, the batter mix with zucchini puree will give a flexible and bendable wrap. Flatbreads are versatile and fun to eat.
