Tasty Trail Mix Snack. I love the taste of homemade roasted almond or cashew. Furthermore, the trail mix has a crunch and a lovely aroma. Of course, the tasty sweet and salty flavor from the snack. Unlike before, I was never too fond of dried fruits with mixed nuts. Whereas now, I love them. Also, homemade does make the dish taste a lot better.

Tasty Trail Mix Snack Recipe

Ingredients:

raw almond 1 cup

raw cashew 1 cup

kosher salt 1 1/2 tsp

3 tsp hot water

1/2 cup raw walnut

1/2 cup pumpkin seed

1 cup dried cranberries

1/2 cup sultana raisins

1/2 cup dark chocolate (non-dairy)

Instructions:

  1. Turn on the oven to 375 degrees F.
  2. Firstly, in a medium bowl, combine 1 tsp salt with a 3 tsp of water. As well as stirring the water, allow the water to dissolve. And then, pour the salt mixture with almond, cashew, pumpkin seed, and walnut. Mix.
  3. Secondly, take a the baking pan, brush oil on the pan. Moreover, spread the nuts on baking pan. Sprinkle salt.
  4. Bake for 15 minutes until golden brown.
  5. Set aside. Let the nuts cool.
  6. In another bowl, add cranberries and raisins. (do not add dark chocolate until nuts are all cooled or it will cause the chocolates to melt.)
  7. Once cool, mix.

Items to Use

Nut: almond, cashew, walnut, pecan, peanut, macadamia nut, pistachio, hazelnuts

Seed: pumpkin seed, sunflower seed, hemp, flax, chia, sesame.

Dried Fruit: dried apricot, cherries, raisins, blueberry, mango, raisin, banana, goji berries, Inca berries, mulberries.

Savory mix-ins: chickpeas, soybean, lentil, popcorn, jerky

Sweet mix-ins: coconut flakes, cereal, chocolate chip, peanut butter cup

Seasonings: parmesan, Caesar.

Therefore, a homemade trail mix is fun. Last but not least, there are a variety of combinations from simple to complex. Then, something with a kick.

Cheesy Macaroni Pasta. When I am short on time, I would like to have a box of Annie’s mac and cheese at home. However, I decided to make mac and cheese from scratch. Of course, I just need macaroni pasta noodles, shredded cheese, milk, or non-dairy milk and butter. As a result, this dish very simple only needs four simple ingredients.

1 1/2 cup gluten-free macaroni

4 tbsp butter

4 tbsp gluten-free flour

2 cup non-dairy milk or whole milk

pinch of salt

1/4 tsp black pepper

1/2 tsp dry mustard powder

2 cup shredded cheddar or marble

  1. Boil water. Then, add salt to the water.
  2. Cook the pasta noodles. Otherwise, do not overcook the gluten-free pasta can get too mushy.
  3. Certainly, take a small pot, melt butter and add in the flour. Once blend.
  4. In particular, pour in the milk and whisk together. Following, add salt, pepper, and mustard powder. Mix.
  5. Finally, add in the cheese. Stir. Finally, do wait for the cheese to melt.
  6. Turn off the stove. Add in the pasta, Stir. Be gentle.

Tips to make Cheesy Macaroni Pasta

For more flavor, add salt to the water while cooking the pasta noodle. When making macaroni and cheese, better slightly undercooked and not overcooked the pasta. Gluten-free pasta noodle tends to soften very quickly. Thus, do rinse the noodle under cold water to stop the cooking.

Gluten-free Newton Treat. Furthermore, my daughter really like the Newton fig snacks with the natural sweetness from the figs and a soft outer layer. For instance, the outer layer is made out of a pastry or biscuit with a gooey fruit center. Altogether, these irritable treats are like a cake. Therefore, who can resist these healthy snacks. Especially, not the children who has a never ending craving for treats.

Outer layer:

1/2 cup butter(soft)

1/4 cup sugar

1/4 cup brown sugar

large egg 1

orange juice 1 tbsp

vanilla extract 1 tsp

zest of 1/2 of an orange

1 cup brown rice flour

1/4 cup coconut flour

1/4 cup millet flour

1 tsp tapioca starch

1 tsp xantham gum

1/4 tsp salt

1/2 tsp baking powder

Filling:

dried figs 1 1/2 cup

1/3 cup water

zest of 1/2 of an orange

pinch of salt

1/2 cup cornstarch for rolling

Instructions:

For the dough

  1. With a medium size bowl, add soft butter and sugar. Also, blend it together.
  2. Then, add egg, orange juice, vanilla, and orange zest. Whisk together until mix together.
  3. Moreover, add in brown rice flour, coconut flour, millet flour, tapioca starch, xanthan gum, salt and baking powder. Stir.
  4. Finally, place the mixture in the refrigerator for an hour.

For the filling

  1. In addition, finely chop the figs. Furthermore, place the figs in a saucepan with water. Let it boil for 5-10minutes.
  2. For instance, pour the mixture in a processor. Also, add in orange zest and salt. The mixture should be smooth. Allow the mixture to cool.

Put together

  1. Turn on the oven to 375 degrees F. Hence, take a baking tray and lay down parchment paper. As well as, split the dough into four parts.
  2. Secondly, clean the table surface, sprinkle lots of cornstarch and rub the cornstarch on the rolling pin.
  3. Thus, place dough on sprinkle surface, roll dough into long and wide. 4 ” x 10″. Cut the edges to give a neater appearance.
  4. Soon, scoop the fig mixture on half of the dough and avoid the edges. Then, sprinkle cornstarch on the spatula to help flip the dough on to the other side of the dough. Press to seal the sides. Cut into 1.5 inches.
  5. Finally, place the fig snack on to bake tray.
  6. Consequently, bake for 12 – 15 minutes.
  7. Let it cool.

Tips for making the snacks

  • On the other hand, make sure the figs turn to puree without any chunks in it
  • Certainly, cook the fig mixture with lots of stirring to prevent from burning
  • cook fig mixture well to give a sweeter taste
  • Needs a lot of cornstarch to prevent the dough from sticking to anything or together
  • Fillings can be poured in a bag to be squeezed onto the dough or scooped onto the dough

Airy Gluten-free Pancake

Airy gluten-free pancake. My children love pancake probably due to the irresistible sweet maple syrup you can add to the pancake. This time, I want to make the pancake more nutritious and delicious on its own. Pancake with blueberry puree good for the eyesight. Nowadays, we are always looking at a screen blueberry that would help with that. Not only this, but it is also great for anyone who has high blood pressure, diabetes, and is good for mental health. I bought frozen blueberries from Costco they are big, juicy, and sweet blueberries. Fantastic to snack on.

Airy Gluten-free Pancake Recipe

Ingredients:

3 eggs

1 1/4 cup gluten-free flour

4 tsp baking powder

3 tbsp butter

3 tbsp honey

1/2 cup Kirkland Frozen Blueberries

1 cup milk

pinch of salt

Instructions:

  1. In a large bowl, add in all the dry ingredients gluten-free flour, baking powder, and salt.
  2. With a small bowl, warm the butter. Then, add to the flour mixture. Mix.
  3. Next, crack the eggs into the big bowl. Combine together.
  4. Take a blender or food processor to pureed the frozen blueberries. Empty the puree berries into the large bowl. Stir
  5. Turn on the stove, when the stove is warm enough to add oil. Spread it around.
  6. Use a large spoon to scoop pancake batter into the pan. Let it cook for 3 – 5 minutes. And, then flip to the other side. Note: with the amount of water or fruit, the higher the water content. Higher chance the pancake will burn. Therefore, do keep an eye on the pancakes to prevent from burning. The pancake’s size is small good size for my children. This batter made about 10 small pancakes.

Scrumptious Pancake

C and O love the blueberries pancakes. They had three each for breakfast and two each for after dinner. Of course, I am super excited my kids love the pancakes. These kids are super picky. No wonder people say kids can be the most difficult critic. Gluten-free pancakes can be eaten with blueberries on top with whipped cream. Or, some simple butter and syrup would be very tasty. If you love blueberries do have it with blueberries syrup.

My daughter loves granola bars. This time I want to make a gluten-free lemon granola bar. My aim to save money on snacks by making my own rather than buying. I want my children to have more healthy snacks. My goal for this year is to make gluten-free snacks. I can have more control over what goes into the snacks. I am going to make a gluten-free lemon granola bar.

Pros

Granola bars are convenient snacks. They are great on the go snacks. Easy snacks can be packed in a lunch bag. The bars have a good amount of protein and fiber. Healthy for the body to prevent snacking on junk food. There are many combination options for granola bars from chocolate chip to fruity or to plain ones.

Gluten-free Lemon Granola Bar Recipe

Ingredients:

1 1/4 cup of gluten-free oat flour (blend my own)

1/2 cup sliced almond(optional)

1/4 tsp salt

1/2 tsp vanilla extract

1/4 cup of honey

1 cup butter (sunflower)

zest of two lemon

1/4 cup of lemon juice

Instructions:

  1. Spray 9 x 9 bake pan.
  2. Preheat the oven to 350 degrees Fahrenheit.
  3. In a bowl, put in oats, almonds, and salt. Mix well.
  4. Add in vanilla, honey, butter, lemon zest, and lemon juice. Stir in to combine.
  5. Take a spatula and spread granola mixture into the pan. Press to flatten.
  6. Bake 20 – 23 minutes until hardened.
  7. Let it cool. Cut into bars.

Freezer Homemade Granola Bar

There are times where my children do not eat as much as I thought. Or, when I need it I don’t have time to make a granola bar. What I did is to freeze the bars, to prevent wasting food. By freezing these snacks, they do last longer. I can take them out whenever I need them. Wrap individual bars with plastic wrap. Then, place in a freezer bag. Try to remove all air out of the bag before zipping it up. Put the freezer bag in a flat part of the freezer. The granola bar needs a couple of hours to defrost. Do try making these gluten-free lemon granola bars for yourself.

When I think of the Christmas holidays, I always think of gingerbread. Why do we think of ginger and spice? These dried ingredients like cinnamon and ginger do keep very well. Ginger is fantastic to hide other ingredients. In the olden days, to make gingerbread you would need potash to help it rise. Unfortunately, potash has an unpleasant taste. Ginger helps to cover the taste. Those who travel regularly the spices used to remind them of home. Therefore, every holiday we bake treats pass down to remember the good times. I have never given my children gingerbread cookies. They always had shortbread or sugar cookies. This year, their school gave them gingerbread cookies as gifts. The first things my kids ate were the icing and sprinkles. Of course, they ate the buttons which are smarties next. Then, the gingerbread cookies. I wanted to try making a gluten-free vegan gingerbread cookie.

Ingredients:

1 1/4 cup of buckwheat flour

1 cup gluten-free oat flour

1/2 cup of coconut sugar

3 tbsp. coconut oil (melted)

4 tbsp. vegan butter

1 tsp gluten-free baking powder

2 tsp ground ginger

1/2 tsp ground cinnamon

salt and pepper

nutmeg (optional)

Instructions:

  1. Sieve the flour. Add in baking powder and mix together.
  2. Add in coconut oil and butter. Combine.
  3. Roll the batter into a ball. Take a plastic wrap to wrap the dough. Refrigerate for 30 minutes.
  4. After 30 minutes. Preheat the oven to 350 degrees Fahrenheit.
  5. Roll the dough on the counter. The dough should be 1 cm thick.
  6. Cut the gingerbread man shape with a mold. Use a spatula to gently move the cookie onto a baking sheet.
  7. Bake for 12-15 minutes.
  8. Let it cool.

My daughter really likes gingerbread cookies. These cookies are healthy made from buckwheat and gluten-free oat flour. Buckwheat flour provides energy. These four have protein and fiber. Oat flour helps to lower cholesterol. Surprisingly, my daughter is not fond of spicy food. These treats had a slight ginger flavor at the end. And, they were filling treats. Gluten-free Shortbread Cookies

This December, I wanted to give baked goods as part of a Christmas gift to others. When I think about the Christmas holiday, I think of treats: gingerbread, candy canes, shortbread cookies, etc. I love shortbread cookies. Shortbread cookies are always the first to come to my mind when I think of cookies. Shortbread cookies are high in butter; therefore, is both crumbly and tender. It is rich but very addictive. This year I am going to make gluten-free shortbread cookies.

About Shortbread

These treats are lovely. They originated in Scotland. Originally they were biscuits made from three simple ingredients white sugar, butter, and oat flour. Shortbread originated from a high percentage of butter recipe. Short is the term used when placed in both biscuits and pastries. It gives the meaning of crumbly. Therefore, this is how a shortening name came from.

Gluten-free Shortbread Cookies Recipe

Ingredients:

1-2 tbsp. maple syrup or honey

8 tbsp. coconut flour

1/2 tsp vanilla extract

4 tbsp. of butter or vegan butter

Instructions:

  1. Preheat the oven 350-degree Fahleite. Take out a baking pan. Spray pan with oil to prevent a cookie from sticking to the pan.
  2. In a small bowl, add butter and coconut flour. Blend with an electric mixer.
  3. Add maple syrup and vanilla to mixture. Mix well.
  4. Use a spoon to scoop batter on to the baking pan. Take a fork and press down.
  5. Bake for 8 – 10 minutes.
  6. Allow the cookie to slightly brown.
  7. Remove from the oven. Let it cool.

Watercress Chinese Detox Soup

My youngest, I recently learned is going through some issues similar to his sister. During the summertime, Ol develops a rash on the back of his thigh. At first, I thought the rash was due to the hot weather. The build-up of sweat. Unfortunately, in September, the rash had gotten worse. The weather was getting cooler, but the skin was not getting better. I suddenly realize he is developing food sensitivity like Char. Ol is a picky eater, who only seems to love milk and eggs.

My little one is a little more hard to reason with. I have my concerns. I address my worries to the Doctor. She said the skin had worsened due to the clothing that comes in contact with his skin. Fleece material is irritating to the skin. Dries out the skin. Those with eczema should only wear loose cotton nothing synthetic. Man-made materials do not allow the skin to breathe. And it irritates the skin.

Eliminate Stage

The first set of instructions from the Doctor is what I expected. The elimination stage. What I need to do is to eliminate dairy, eggs, gluten, and sugar. With dairy, I need to slowly introduce non-dairy milk and reduce the dairy. This allows him to slowly adjust and to eventually remove diary out of his system. Also, the naturopathic Doctor recommends watercress Chinese soup to help with his condition.

1-2 bunches of watercress

6-10 dried dates

300g – 500g pork ribs

3 tbsp. goji berries

6-10 cups of water(or more to cover the ingredients and fill half of the pot)

1-2 carrots

  1. Ina medium pot, fill water and allow it to boil. Blanch the bones. Let it boil for 5 minutes. Once boiled. Throw away the water.
  2. In a crockpot, fill with water. Add pork bones. Then, add the rest of the ingredients.
  3. Cook for 4-5 hours.
  4. Add salt for flavor.
