Breakfast Energy Cookie is wonderful on the go snack. When I am short on time, I have no time for breakfast. I want something that provides me with healthy nutrition and energy. However, I want something good for me. Breakfast cookies are great for anyone who is always on the go. Hence, the cookies are hearty. Evidently, the cookie is gluten-free, dairy-free, and delicious.
Breakfast Energy Cookies
1/2 cup cranberries
1 cup gluten-free rolled oats
3 tbsp maple syrup
1 tbsp chia seed
1/2 tsp baking powder
1 tsp cinnamon
1/2 cup gluten-free oat flour
1/4 tsp salt
2 tbsp almond milk
3 tbsp coconut oil
Turn on the oven to 325 degrees F. Then, In a bowl, combine oat, oat flour, dried cranberries, chia seed, cinnamon, baking powder, and salt. Whisk together.
And, mashed the banana. Secondly, add it to the bowl with all the ingredients.
Moreover, add in coconut oil, sugar, and almond milk.
Thus, take a spoon scoop some batter on a baking sheet above a baking tray.
At this time, flatten the cookie. Note: this cookie does not expand but does leave room between each cookie.
Subsequently, bake for 15 minutes. The cookie should appear golden brown.
Let it cool.

I think it would be good to try something different.
1 cup gluten-free rolled oats
1/4 cup gluten-free oat flour
1 tsp ground cinnamon
1/4 tsp salt
2 tbsp coconut oil
1/4 cup & 2 tbsp natural peanut butter
3 tbsp maple syrup
3 tbsp coconut sugar
1 tsp vanilla extract
Turn on the oven to 350 degrees F. Following, use an 8-inch square pan or two loaf pans.
Secondly, in a bowl, add in the dry ingredients oats, oat flour, cinnamon, and salt. Mix to combine.
Then, with a medium-size bowl, add in the wet ingredients coconut oil, peanut butter, maple syrup, coconut sugar, and vanilla. Whisk.
Then, combine the wet ingredients with the dry ingredients.
Next, transfer on to the baking tray.
Finally, bake for 15 – 20 minutes. The bar should be golden brown.
Allow the bars to cool before cutting.
To have a healthy bar, there are important things to pay attention to. Of course, it is important to focus on sugar. Thus, bars are better to use natural sugar from dates or natural maple syrup rather than table sugar. Furthermore, do choose good fat for the body such as nuts and seeds. These fats will make the body feel fuller. And the body will feel better. Besides, a good combination is to have good fiber, protein, and healthy fats.
Gluten-free Cheese cracker. My daughter loves cheese. As well as that my kids love both Ritz crackers and Goldfish crackers. Therefore, she tends to lean towards the old cheddar cheese, a stronger flavor. Nonetheless, I thought the cheesy cracker would be a delicious snack my kids would like. Also, these crackers can go with cream cheese on top or be made into a mini sandwich.
Gluten-free cheese cracker
1 cup gluten-free flour
1 cup shredded cheddar cheese
4 tbsp butter
2 tbsp water
topping (sea salt sprinkle on the top)
Turn on the oven 350 degrees.
Next, shred the cheese.
Secondly, with a food processor, add in flour, cheese, and butter. Blend to combine the ingredients.
Then, add in water if it is too dry.
Hence, split the batter into two portions. Refrigerate for 15 minutes.
Take one ball, roll the dough out on a baking tray on parchment paper.
Thus, cut into squares. Poke four holes on each cracker. Sprinkle sea salt on top.
At this time, bake for 10 – 15 minutes.
Let it cool.

Nonetheless, I decided to purchase a box for her. Then, I decided to try making these cookies. Therefore, the next item to make on my snack list is some gluten-free bear paws.

1 1/2 cup gluten-free flour
brown sugar 1/4 cup
unsalted butter 1/4 cup
molasses 1/4 & 1/8 cup
1 egg replacer or 1 egg (room temperature)
1/2 tsp cinnamon
1/2 tsp ground ginger
dash of nutmeg
dash of clove
pinch of salt
In a microwave, melt the butter.
With a small bowl, add in sugar, egg replacer, and molasses. Afterward, do whisk together.
Next, in another bowl add in flour, spice, and salt. Mix well.
Wrap the top of the bowl, store in the fridge for 1/2 an hour. This will allow the dough to stay in shape while forming the balls.
Preheat the oven to 390 degrees. Then, place the parchment paper on the baking tray.
Hence, Scoop the dough with a spoon. Indeed, shape the dough into a ball put on a baking tray. Then, flatten the ball slightly. Finally, do the same with three small balls for the toes.

Soft Gooey Chocolate Chip Treat. Summer is here. It is all about cold treats for the summertime. My children love ice cream. They can’t seem to get enough. The weather is getting hotter. Therefore, more cold treats. Lately, I have been making popsicle smoothies. What would be fun is a chocolate chip cookie ice cream sandwich. A soft gooey treats.
Firstly, preheat the oven to 375 degrees. In a baking tray, lined with parchment paper.
With a bowl, scoop in coconut oil. Then, add in the syrup. Blend together. Once done, crack an egg into the bowl
Finally, add in vanilla extract and mix together.
Use a separate bowl, mix in almond flour, baking soda, and salt.
Pour dry mixture into the wet mixtures. Therefore, add in the chocolate chips.
Take a spoon, scoop a big scoop into a baking sheet.
Afterward, bake for 8 minutes. Let cookie bake until golden brown. Allow it to cool.
Place an airtight container.
Ice cream sandwich
When the cookie is cool enough, use a spoon to spread the ice cream on the bottom or flat part of the cookie. Best to have an ice cream sandwich right away. If prepared ahead to store in the freezer, the cookie might be soggy. Fun sandwich by making unique ice cream a flavor like salted Carmel. Nothing like a homemade ice cream sandwich. Add in chopped nuts to the ice cream for a crunch to the sandwich. How about adding sprinkles to the ice cream.

Lately, my son seems to have a love for donuts. Timbites. He loves the little donut with fillings. He is little. Timbites are prefect size for him. And, my son can eat a lot of the Timbits. They are easy for him to eat and not messy. Nothing like making homemade donuts. There is always time for donut snack.

1 1/2 cup of whole wheat all-purpose flour
1/3 cup sugar
2 tsp baking powder
1/2 tsp salt
1/2 tsp ground nutmeg
1 large egg
1/2 cup whole milk
2 tbsp. unsalted butter
oil for frying 1/2 – 1 cup
1/2 cup sugar(sprinkle on top)
In a bowl, add flour, baking powder, salt, and nutmeg. In another bowl, combine egg, milk, and butter. Combine.
Put the dry ingredient in. Mix to combine.
In a small pot. Add oil. Warm oil to 375 degrees Fahrenheit.
Use a small round ice cream scoop. Cook five to six donut at a time.
Flip to allow the other side to cook. Once the donut turns brown. Cook for 1-2 minutes. The donut is ready.
Once done. Place on a paper towel. Sprinkle sugar on top. It is time for donut.
Tips for Donut Making
Before frying donut, make sure there is enough oil in the pot. About one cup of oil or more. Don’t let donut hit the bottom of the pot when placed in the pot.
The frying temperature should be 360 – 375-degree Fahrenheit

Donut is fun to eat. Not only my children love them. I have fun eating them. Sometimes Mom needs a little sugar to deal with the high energy kids. There is always a time for donut snack.
