Crumble Topping

1/4 cup brown sugar

1/2 tsp ground cinnamon

2 tbsp butter(melted

2 tbsp sugar

1/3 cup gluten-free flour

Instructions:

  1. Turn on the oven to 350 degrees F.
  2. Firstly, in the muffin baking tray, place the muffin liner.
  3. Then, in a bowl add the following applesauce, butter, and eggs. Mix well.
  4. As well as add sugar, salt, and vanilla extract. Whisk together.
  5. Soon mix in baking soda, baking powder, ground cinnamon, and then xanthan gum. The batter should be smooth.
  6. Finally, use a spoon to scoop the batter in the baking tin.

Crumble on Top

  1. Before baking the muffin, work in the crumble for the top of the muffin.
  2. Besides, with a small bowl add in all the crumble ingredients except the butter. Mix.

Whereas I don’t want to have too much sugar all the time, I would make treats with chocolate chips once in a while. Therefore, this will satisfy her taste buds and I won’t be spoiling her all the time.

Very Chocolatey Cookie

1/2 cup butter(soft)

1/2 cup brown sugar

1/3 cup sugar

1 egg(large)

1 tsp vanilla

1/2 tsp baking soda

1/2 tsp Himalayan salt

1 1/3 cup gluten-free flour blend

1/4 cup potato starch

1 cup chocolate chip

Instructions:

  1. With a bowl, melt the butter, brown sugar, and sugar. Stir. Next, add in vanilla extract and egg. The mixture should be creamy.
  2. Furthermore, add salt, baking soda, gluten-free flour blend, and potato starch.
  3. Then, add chocolate chips. Moreover, take a spatula to fold the chocolate chips into the batter. Before baking, refrigerate for one hour.
  4. Preheat the oven to 350 degrees F. Place the parchment paper on the baking tray. Scoop with one tablespoon cookie dough on the tray. Finally, with the fingers or hand round the shape of the dough to make it nice and smooth.

Filling:

dried figs 1 1/2 cup

1/3 cup water

zest of 1/2 of an orange

pinch of salt

1/2 cup cornstarch for rolling

For the dough

  1. With a medium size bowl, add soft butter and sugar. Also, blend it together.
  2. Then, add egg, orange juice, vanilla, and orange zest. Whisk together until mix together.
  3. Moreover, add in brown rice flour, coconut flour, millet flour, tapioca starch, xanthan gum, salt and baking powder. Stir.
  4. Finally, place the mixture in the refrigerator for an hour.

For the filling

Nonetheless, I decided to purchase a box for her. Then, I decided to try making these cookies. Therefore, the next item to make on my snack list is some gluten-free bear paws.

Ingredients:

1 1/2 cup gluten-free flour

brown sugar 1/4 cup

unsalted butter 1/4 cup

molasses 1/4 & 1/8 cup

1 egg replacer or 1 egg (room temperature)

1/2 tsp cinnamon

1/2 tsp ground ginger

dash of nutmeg

dash of clove

pinch of salt

Instructions:

  1. In a microwave, melt the butter.
  2. With a small bowl, add in sugar, egg replacer, and molasses. Afterward, do whisk together.
  3. Next, in another bowl add in flour, spice, and salt. Mix well.
  4. Wrap the top of the bowl, store in the fridge for 1/2 an hour. This will allow the dough to stay in shape while forming the balls.
  5. Preheat the oven to 390 degrees. Then, place the parchment paper on the baking tray.
  6. Hence, Scoop the dough with a spoon. Indeed, shape the dough into a ball put on a baking tray. Then, flatten the ball slightly. Finally, do the same with three small balls for the toes.
  7. Later, bake for 10minutes.

These couple of months, I would love to try to save money by making my snacks for the kids. First, I want to make granola bars. Surprisingly, my kids are snack monsters. They love to eat. However, I believe I spend too much money on snacks. In other words, I would need to focus on homemade snacks.

1/4 cup non-dairy milk

1/4 cup nut butter(or sunflower butter)

2 cup of gluten-free quick oats

1/4 cup almond flour

1/4 tsp salt

1 tsp vanilla extract

1/4 cup dark chocolate chip

Instructions:

  1. Turn on the oven to 350 degrees. Take a baking pan 8 x 8 or something larger. Subsequently, place parchment on the pan.
  2. With a large bowl, mix gluten-free oats, almond flour, and salt.
  3. Then, add the following honey, nut butter, and non-dairy milk. Secondly, whisk or stir together.
  4. Scoop the mixture onto the baking tray. Spread the mixture with a spatula and press down.

He loves anything with a crunch especially chips. Therefore, I wanted to try making breakfast pretzel bites. Additionally, when I sprinkle kosher salt on top as a seasoning it is quite nice. These remind me of a pretzel.

Ingredients:

Baking spices:

1 tsp baking powder

1/2 tsp baking soda

3/4 cup brown rice flour

kosher salt 1 tbsp

potato starch 1 cup

psyllium husk 1 tbsp

yeast 1 1/2 tsp

salt 1 tsp

tapioca flour 1 cup

3/4 cup white rice flour

1 tsp xanthan gum

Oil and vinegar:

1 tsp apple cider vinegar

1/4 cup olive oil

Condiments:

1 tbsp honey

1 tbsp butter

Liquid:

1 1/4 cup water (105 – 110 degrees)

Other:

1/4 cup Non-dairy milk

Instructions:

  1. In a bowl, add yeast in warm water with honey. At this time, allow it to sit for 10 minutes.
  2. With a large bowl, add baking powder, baking soda, brown rice flour, kosher salt, potato starch, psyllium husk, tapioca flour, and white rice flour. Mix well. Then, add in the yeast to the dry mixture. Not only pour in non-dairy milk but also if it is too dry. Next, do add in the olive oil and vinegar. Afterward, mix some more.
  3. Apply olive oil all over the dough. Furthermore, cover the bowl with plastic wrap and a warm towel. Let the dough rise for an hour.
  4. Knead the dough. Moreover, roll it out into a long line. Cut into 1 inches in size.
  5. Finally, place onto baking tray. Leave spaces between each one. As well as that for color, brush with olive oil or butter or egg yolk on the surface. Sprinkle kosher salt on top for taste.
  6. Bake 15 minutes in 400 degrees.
  7. Remove from the oven. Let it cool.
