Parmesan Spinach Quiche. I enjoy a good gluten-free bite-size snack. A snack where I can finish in a couple of bites. Something easy and convenient. A healthy snack is high in protein, dairy, and vegetables. A delicious snack to fuel the body. Lovely parmesan spinach quiche is good for a snack or breakfast.

Parmesan Spinach Quiche

Parmesan Spinach Quiche

Ingredients:

6 eggs

1/4 cup parmesan cheese

1/4 cup spinach (shredded)

1 green onion

optional: shredded marble cheese or cheddar cheese

salt and pepper

Instructions:

1. In a muffin pan, spray muffin pan.

2. Crack and put one egg in each muffin tin.

3. Add shred of spinach in each.

4. Wash and cut green onion.

5. Put a little in each one.

6. Sprinkle parmesan in each tin.

7. Take a fork and mix.

8. Season with salt and pepper. Stir.

9. Bake for 20 minutes.

10. Allow the quiche to cool.

11. These can be frozen and used for later.

Things to do with Eggshells

  • In the garden, if your garden tends to get slugs or soft-shelled insects. Spread eggshells on the area to prevent the insects from visiting the same area and eating your plants
  • Eggshells give the garden calcium to grow better plants
  • The shell can be used to plant seedlings
  • These shells can be used as compost
  • It can be used to scrub pots
  • Or, add in the crockpot to make chicken, beef or pork stock

Cheese Pizza Toast. My children loves pizza. They can never have enough pizza. I love making pizza from scratch, but lately it has been a little tricky. My freezer broke down so I have been a little busy. Recently, I saw a simple post to make a simplier version of pizza snack. This would be fun for my children. Char and Ol seems to really enjoy helping with cooking. I was inspired to try this out. Cheese pizza toast.

Chinese Pizza Toast Recipe

Ingredient:

2 – 4 gluten-free toast

1 (8 oz) can of tomato sauce

1/4 cup – 1/2 cup marble cheese

1 tbsp. butter

8 – 10 slices of pepperoni

sprinkle oregano

sprinkle thyme

Instructions:

1. Turn on the oven to 200 degrees. This is to preheat the oven In a baking pan. In a baking pan, spray the pan. Place the toast on top of the pan. Apply butter on the surface of the toast. Put the toast in the oven. Let the toast harden a little. Remove from the oven.

2. Spread tomato sauce on the toast. Sprinkle oregano and thyme on the sauce.

3. Add favorite toppings like pepperoni, ham and pineapple, or just cheese.

4. This time I added pepperoni with cheese on top.

5. Let the cheese become all melted.

6. Ready to serve to little ones.

Kids Having Fun

Lately, my children have been enjoying helping out at home. This would be a fabulous time to encourage them to learn about healthy eating. During our shopping trip, I would teach them how to pick out apples or vegetables. This would encourage healthy eating they would have more appreciation for food. Do try cheese pizza toast.

Crockpot Chicken Parmesan on Rice. When I have a crazy week or a chaotic day, I need something easy. Rice and noodle are what we tend to have at home. Chicken is easy to digest especially little ones. who does not have all their molars? Why not a dish with only a few ingredients. I do love my crockpot; I can’t live without it. A healthy meal without being at home I can feed my children. They tend to be hungry all the time. There is no way I can cook healthy and take my children to activities. Therefore, I rely on my crockpot a lot.

Crockpot Chicken Parmesan with Rice

Ingredient:

2 – 4 chicken legs

2 can cream of chicken

1/4 cup of chicken broth

1/2 – 1 cup of milk

optional: 1/2 cup of shredded salad spinach

1 cup rice (uncooked)

1/4 cup parmesan

salt and pepper

Instructions:

1. Spray the crockpot to prevent sticking. First place chicken in the pot.

2. Add rice. Then, the cream of chicken. Sprinkle salt and pepper on top. Pour the broth in. Spread all over the rice and chicken.

3. Cook for 3 – 4 hours on high. Once close to finishing. Pour in the parmesan cheese and the spinach all over.

4. Cook another 1/2 hour. Mix. Shred the chicken with two forks. Stir to mix.

5. If the dish is too thick, add more broth.

6. Enjoy!

Add More Healthy Nutrient

To make the dish more nutritious, add bone broth to the dish. Increase antioxidant and vitamin C by adding a small amount of kale in the crockpot chicken parmesan with rice. Or, build immunity by adding two slices of ginger. If you want a crunch or more texture to the dish, sprinkle small chunks of almond or nuts.

For Better Health

For a healthier body, do try to prepare simple home-cooked meals. Attempt crockpot or freezer meals, this will help to save time and prevent stress. Drink more water by adding sliced fruit for some flavor and vitamins. For example, adding slice lemon will provide the body with vitamin C. Make one change per week. My dad makes Gluten-free Meatballs all the time. Our family tends to have Italian dishes quite often pizza, lasagna, and meatballs. I love the spinach feta cheese pizza my Dad use to make. And, I do enjoy the meatball he made in the past. Delicious meatball is juicy. The onion makes the meatball have a slightly sweet flavor. Sometimes we have meatball with spaghetti or a dish by itself with rice and vegetable. Do try this gluten-free meatball dish.

Ingredients:

1 egg

2 tbsp. olive oil

1 lb ground pork

1/2 cup of gluten-free bread crumb

1/2 cup of vegetable

1 cup onion

Instructions:

1. Preheat oven 350-degree Fahrenheit.

2. In a medium bowl, beat egg.

3. Separate bowl put in ground pork and bread crumbs.

4. Wear gloves. Mix the mixture with hands.

5. Add chopped spinach. Mix to combine.

6. With a baking tray, spray to prevent from sticking.

7. Shape the mixture into balls. Place on the baking tray.

8. Let it bake for 30 – 40 minutes.

9. Let it cool before eating.

Tips to make Meatball

When meatball has a high-fat content, it is very tender. Lean protein can be easily overcooked and dry out. By allowing the breadcrumbs to absorb some liquid before mixing the meat, it retains the water. Over mixing the meat mixture it can become tough. Be careful. Do cook all sides of the meatball before baking to keep the meatball juicy.

Who can resist juicy meatballs? These can be frozen to be used later. Cook the meatball on all sides. Then, place it in a Ziploc bag to be used for later. These can be used in a crockpot and store in the freezer. Do try these juicy gluten-free meatballs.

Nutritious cabbage roll soup. On days, I want something easy or different from my regular meal plan. A comforting soup, a soup that warms the belly. Soup with lots of vegetables such as cabbage, onion, and carrot. Simple soup where there is a carbohydrate, protein, and vegetable. No time for a meal how about a nutritious cabbage roll soup would be a go-to meal. This soup is simple and easy.

Ingredients:

2 tsp vegetable oil

1 lb lean ground beef

1 medium yellow onion(diced)

2 clove of garlic(minced)

4 cup of green cabbage(chopped)

1/2 cup of white rice (uncooked)

1 bay leaf

3 tbsp. light brown sugar

2 tbsp. parsley

Instructions:

1. In a large soup pot, turn on the stove. Pour oil. Cook garlic and onion.

2. Add ground beef. Season the ground beef.

3. Pour into the crockpot. Put in cabbage, carrot, tomato sauce, broth, white rice, bay leaf, and brown sugar. Mix well.

4. Let the soup cook for 4 – 6 hours.

5. Once done. Remove bay leaf and add in parsley.

6. Enjoy!

Cabbage Soup

If you like cabbage roll dish, do consider cabbage roll soup. There is less work, much similar. This soup is filling great for a dinner option. The original dish requires boiling cabbage, filling, and wrapping the ingredients. Then, at the end to bake the cabbage roll dish. There are fewer steps.

Store

How to store the soup? Soup can be poured into small containers after cooling. Place the soup container flat in the freezer. Once frozen, it can be either stored upside down or sideways. However, you like to organize it in the freezer. Do try nutritious cabbage roll soup.

Soup, creamy nutritious leek soup, I think about soup for lunch or dinner. On chilly days, when I feel exhausted or worn out, I love some comfort food. A lovely bowl favorite of soup and leek to help my immunity. The saltiness from the parmasen and kosher salt. The sweetness of the soup form the leek. Therefore, this is one of my husband’s favorite soup.

Ingredients:

3 leeks

butter 1tbsp

1 – 4 cup of chicken broth

2 russet potatoes

1 – 4 tbsp. kosher salt

1 – 5 tbsp. parmasen

1/2 cup of sour cream

salt and pepper

Instructions:

1. In a large pot, add water. Let it boil. When the water boils, put in the potatoes.

2. Once the potatoes soften, it is ready.

3. In a pan, add oil. Place leeks in the pan. Cook until soften. Place the cooked leek aside. Continue this until all the leeks are all cooked.

4. Add the leek to the pot with the potatoes. Let it simmer. Cook for 1/2 an hour.

5. Turn off the stove. Let the soup cool. After the soup cools, scoop the soup into the blender. Blend together.

Note: be careful the soup can still be hot. Make sure the lid is locked before blending.

6. Carefully, pour the puree soup back into the pot. Turn on heat on low.

7. Add in kosher salt, parmesan cheese, and sour cream. Mix to combine. Let the content simmer.

8. Then, add in salt and pepper for flavor.

9. Taste the soup to see if it needs more parmesan cheese, kosher salt, and pepper.

10. Enjoy!

Leek Soup

History of leek soup originally came from Wales. This vegetable is good for fiber and helps with the water content. Leek helps the body to feel fuller and to eat less. It curves the appetite. What this vegetable is part of the onion family. These vegetables such as shallot, onion, scallion and leek helps to reduce inflammation. Inflammation can be from body injuries from sports, and the body fighting something like infection. Do have a bowl of creamy nutritious leek soup to have a healthier body.

Slow cooker beef and broccoli. My family is Asian. I do tend to cook more often Asian dishes. Beef and broccoli are what people are familiar with when people think of Chinese food. Who doesn’t like beef and broccoli, which is a saucy dish? The beef is tender. This dish goes very well with rice. The sauce makes people want to get extra servings of rice. Beef and broccoli give a sweet and slightly salty flavor to the dish. And when you make this at home, it is less oily. People love the gravy from slow cooker beef and broccoli dish.

Ingredients:

1 – 2 lb beef blade steak(cut into 1/4 inches in a slice)

1/4 cup of gluten-free soya sauce

2 tbsp. brown sugar

1 – 2 slice of ginger

1 tbsp. olive oil

1 – 2 cup of broccoli(chopped)

2 onions medium size (cut into slices)

1 – 2 tbsp. cornstarch

Instructions:

1. Take the steak. Slice into thin strips slices 1/4 inches of the steak. The cut should be made against the grain of the beef. Put aside.

2. Soak the broccoli. In a bowl, add soya sauce, brown sugar, and oil. Stir.

3. After the vegetables are done soaking, cut the florets into smaller chunks.

4. Place the broccoli on the bottom of the crockpot. Then, add the sliced meat on the top.

5. Pour the sauce all over the meat and broccoli. Add ginger. Pour 1/4 cup of the water into the crockpot.

6. Turn on the crockpot for 1 1/2 hour to 2 hours. Check to see if the broccoli and beef are cooked. Note: Do not overcook the beef or it will be tough.

7. Once finished. In a small bowl, add hot water with 2tbsp of cornstarch. Stir until it dissolves. Pour in the crockpot. Allow it to cook for 1 /2 hours.

8. Enjoy!

Homemade beef and broccoli are easy and healthy. This can be made in the comfort of your own home. No need to choose to take out. Beef and broccoli can be frozen or store in the freezer. The dish can be used as a freezer dump meal to save time. If you want to have tender beef, marinade with pineapple to have tender beef. How to choose the meat for the dish. Flat iron steak would be a good choice. This choice of meat would be a very tender choice of meat. My children love the saucy dish. Do try slow cooker beef and broccoli.

I saw a recipe I think my children would love to eat. These mac & cheese snack bites. My children love anything with cheese. Why not these bite-size snacks to have as a snack or have it for breakfast. Their school does not want them to have sugary snacks I think these would be a nice addition with their lunches.

1 cup gluten-free macrooni noodles

2 tbsp. gluten-free flour

2 tbsp. vegan butter

1 1/2 cup cheddar cheese

1/2 cup non-dairy milk

Instructions:

  1. In a small pot, add water. Let it boil.
  2. Once bubbling. Add pasta. Stir to prevent sticking. Once done. Pour into a strainer.
  3. Turn on the stove, add butter and flour. Stir.
  4. Add in milk. Mix. Then, add in the cheese. Stir constantly.
  5. Pour the macaroni in. Regularly stir the content.
  6. Spray the muffin pan.
  7. Use a spoon to scoop the macaroni and cheese into the muffin pan.
  8. Pre-heat oven 375 degrees. Sprinkle cheese on top.
  9. Bake for 10 minutes or until the pasta hardens.

Challenging

Challenging with kids, they get bored or tired of snacks. I am always looking for new ideas. They love blueberries but when they bored I need to transform them into something different. I had changed it to blueberry dipped in yogurt and frozen in the freezer. What can I do? How should I change it up? Being a mom, children love to give moms all these challenging tasks. We need to do what is impossible. And, sometimes just fix things right on the spot. Mom just needs to be super creative and do the impossible. Or, what I need to use to change it up. Crockpot Sweet Dijon Chicken

My aim to make healthy nutritious meals like crockpot sweet Dijon chicken, while saving me on time. I love the idea of a freezer crockpot meal. This helps a lot on the days where you are running around a lot with kids’ activities and not much time to cook. You prepare ahead and throw it in the freezer. When I am short on time, I go to my freezer crockpot meals in the freezer. This helps with the stress level and the exhaustion.

Crockpot Sweet Dijon Chicken

Ingredients:

1-2 lbs of drumstick

1/4 – 1/2 cup of maple syrup

1/4 – 1/2 cup of Dijon mustard

salt and pepper

Instructions:

Freezer Preparation:

  1. In a bowl, add maple syrup, Dijon mustard, salt, and pepper.
  2. Add the chicken. Allow the sauce to coat all over the chicken.
  3. Place in a freezer bag.

Cook:

  1. Allow the items to thaw overnight.
  2. Pour the content out of the bag into the slow cooker.
  3. Cook 6 – 8 hours on low or 4 – 5 hours on high.

How to Save on Time

If you have some time, do some food preparations ahead:

  • Peel and chop carrots and place in Ziploc bag
  • Cut zucchini into chunks and place in Ziploc in the fridge (do use within 2 – 3 days)
  • Making a dish, if you need onions, prepare a day ahead of time. Prepare a day before to save on time.
  • Take the spiralizer to make vegetable noodles and store in the freezer

Food Item not store well

Certain foods do not freeze well. Eggs and dairy don’t freeze well. Items with lots of water do not store well. Lettuce, cucumber, and tomato do not freeze well. Avocado becomes brown. Uncooked potatoes do change the texture making it soft. The freezer does a lot of things but not everything can be frozen. Do try this crockpot sweet Dijon chicken.

  • If there is more fat in the yogurt, the yogurt will be thicker, richer, and smoother

  • Natural fruit with no added sugar
  • Do not use brown sugar, molasses, and cane syrup

Crockpot Honey Garlic Chicken

This week I am trying crockpot honey garlic chicken. I love adding new dishes to my recipe list. I worry my children get bored with the dishes I cook regularly. Sometimes something new is always nice. What I feel I can’t live with as a Mom is my crockpot. It can be a struggle to cook with kids around. They always want to spend time with me. As a Mom, I am very happy. Unfortunately, I have trouble getting things done.

Slow Cooker Honey Garlic Chicken

1-2 lbs of drumsticks

1/4 cup honey

1/4 cup of soy sauce

2 tbsp tomato paste

1 tsp molasses

1/2 tsp oregano

4 garlic, minced

sesame seed (optional)

2 tbsp tapioca starch/ cornstarch

Instructions:

  1. Turn on the stove. Add oil. Sear the chicken to seal the juice.
  2. Place the chicken in the crockpot.
  3. In a bowl, add honey, tomato paste, soy sauce, molasses, oregano, and garlic.
  4. Pour the sauce onto the chicken.
  5. Cook high 2-3 hours or low 5-6 hours.
  6. When ready to serve, add tapioca starch with 2 tbsp. of cold water. Add to crockpot. Mix.
  7. Enjoy!

Crockpot chicken dish is gluten-free, dairy-free, and egg-free. The dish is sweet from the honey. Chicken is in small bite-size, so this makes it easy for toddlers to have. Before placing the ingredients in the crockpot, you cook all the sides of the chicken to sill the juice. The meat will be moist while being cooked in the crockpot.

Asian Cooking or Diet

Are Asian dishes healthy? The ratio of meat to vegetables is healthy? More vegetables and the amount of meat is less 3:1. According to the food chart, this is the daily recommended amount. Asian food has fewer calories.

Tips for Asian Cooking:

  • Cook stems separately from leafy parts of vegetables
  • marinate the meat before cooking
  • prepare the vegetables before cooking
  • Allow the wok to become hot then add oil
  • Add starches close to the end

Time with Family

Our family does tend to eat chicken and fish more often. Chicken is easier for toddlers to eat since they do not have all their molars yet. Also, the meat texture is not as tough as beef. Therefore, it is easier to chew. Fish is very easy for children to have and the omega-3s are very good for their brain. Having fish weekly, this will give the children healthy skin. Dance Cardio Exercise is a lot of fun. A good dance exercise. Don’t worry about how good of a dancer or how bad a dancer you are. Have fun. In the past, I always enjoy watching dancing competitions ‘If you think you can dance’ I find extremely entertaining. The dancers are very talented the moves they come up with can be amazing. I think dancing shows are inspirational. They can be very inspirational. These shows are encouraging me to want to try and do better. Want to try something new and different, they can be very encouraging to want to try new moves.


My challenge dance cardio

If I don’t exercise, I can’t seem to get through my day. I have to admit I feel extra grumpy dealing with my children. Unfortunately, I tend to not have as much patience. With exercise, I feel emotionally better. Less fatigue. Much happier. Dance exercise improves mood, improves the brain and good for the body. People should shimmer and shake their bodies. When you move and listen to tunes, endorphins get released to decrease the tiredness and good for the brain. Do have lots of water during the dance exercise and afterward.

Dancing Cardio

Dancing cardio is an aerobic exercise. This type pumps the heart and tones the body. Regularly, you need to keep up. Your focus is on the task. Next thing you know, you are having fun. With dance cardio, you can continue to learn new moves. Always interesting and fun, sometimes when you are listening to the beat it just keeps you moving. Dance cardio helps with the stiffness. Great to develop lung capacity. Dancing helps to improve moods when you are feeling down or when your day is not going the way you want. Music improves energy level. Do try dance cardio exercise for yourselves.

Creamy Tomato Soup

Creamy Tomato Soup

This week I am making creamy tomato soup. There are a lot of options with soup. Soup can be thick, creamy, chunky, and liquid with solids. Today there are many terms you hear often with soup for example bisque, chowder, stock or broth, bouillon, and consommé. You have a choice of different meats seafood, chicken, pork or beef bone to add more flavor. Choices of liquids to add for thickness or smoothness with dairy, non-dairy, cream, and cheese to give the creamy element.

Certain spices can remind people of a different culture. If by adding chili powder, they can give it a kick. Fantastic for cold weather. Soups are wonderful to keep you hydrated during cold winter weather. In the olden days, pots are not as strong they cannot handle the heat. With the past, soups were cooked by adding hot stones to cook the soup. The importance of soup is the cooking process to take out all the nutrients from the protein and vegetables.

Creamy Tomato Soup

Ingredients:

2 tbsp. vegan butter

1 onion(diced)

2 clove of garlic

4 cup of tomato

1/4 tsp baking soda

1 tsp parsley

1 large bay leaf

1/4 tsp salt

1 tbsp. basil

2 tsp honey

salt and pepper

Instructions:

  1. In a medium pot, turn on the stove to allow vegan butter to melt.
  2. Chop and peel onions. Dice onions. Mince the garlic.
  3. Add garlic in the pan, saute the garlic and add in the onions. Cook and stir to combine.
  4. Place tomatoes, broth, baking soda, parsley, and bay leaves. Let it cool. Once boiled. Lower the heat.
  5. Remove the large herb such as bay leaves. Allow it to cool and puree the soup.
  6. Can add gluten-free crouton on the top of the soup. I like to stir in a little of the non-dairy milk to make it creamy.
  7. Enjoy!

What to Add to Soup

  • fresh diced tomato on top
  • pesto on top
  • saute bacon and onion on top
  • chunks of chicken with spinach
  • fresh basil on top

The benefit of Tomato Soup

Creamy tomato soup is a wonderful simple nutritional soup to have weekly. Tomato has a large amount of lycopene, which is good for inflammations. You can make a quick lunch grill cheese with creamy tomato soup. What can you have with tomato soup? You can have soup with mozzarella stick, avocado salad or with BLT. Tomato soup can be stored in the freezer. If you want to freeze the soup, do not add dairy products in it until you want to have the soup. It can be stored for 6 months.

Challenge 12 Strengthening the Back

I challenge myself with challenge 12 strengthening the back. I do tend to have a sore back when I have a busy week. Exercise will help to increase blood flow and lower stiffness. This helps with healing. The back is very important. It is connected to many things. There is much muscle in the back. My challenge 12 strengthening the back.

Things to strengthen the back

  • Bridges – this improves the muscle in the buttocks. Strengthening the gluteus maximus, this improves the lower back issues
  • Knee-to-chest-stretches – help with tension and pain.
  • Lower back rotational stretches – this exercise lower the stress on the area by strengthening the core
  • Draw in maneuvers – the area works on is the transverses abdominals. The front and side of the abdomen. The spine and lower back area.
  • Pelvic tilts – this exercise helps with the tightness on the back. It improves the pelvic area. The leg lifts lower strain on the back.
  • Lying lateral leg lifts – this improves the hip muscle. The muscle improves the pelvic area. The leg lifts lower the strain on the back
  • Cat stretches – strengthens the back

Sleep Salve Help with Sleep with back issues

Ingredients:

2tbsp coconut oil

2 tbsp. grapeseed oil

2 tbsp. beeswax

10 drops of lavender oil

10 drops of cedarwood essential oil

Instructions:

  1. In a small pot, melt coconut oil, grapeseed oil, and beeswax. Combine together.
  2. Add in the essential oil. Stir together. Pour into a small container.
  3. The mixture will solidify.
  4. After the mixture cools. Store in a cool area.

You can smell the mixture to help with the stress or apply it to the pressure point area.

My challenge

My challenge 12 to strengthen the back. The back is connected to many parts of the body. Need to take care of the back. Sometimes I forget about the posture that can have an effect as well. To strengthen the back, the best treatment is to exercise regularly.

Carrot potatoes and tomato soup

Every week, I make a weekly soup. Carrot potatoes and tomato soup. I love soup throughout the year. Both during the summertime and during the fall, I can have soup all the time. The weather got a lot colder this week we had snowfall warnings. The roads are very icy. In the last couple of weeks, my children were home with the flu for a couple of weeks. Therefore, I needed to make some soup to boost their vitamins and their immunity. My family grew up with carrot potatoes and tomato soup, which I had forgotten about. Last year, my daughter has become sensitive to tomato. The soup was forgotten. Now, she can have them again but in moderation. Carrot potatoes and tomato soup. My Mom uses to make this often.

Carrot potatoes and tomato soup

Ingredients:

1 tomato

1-2 potatoes

1 carrot

1/2 pot of water

Pork bone or chicken bone(optional)

Instructions:

  1. Peel and cut carrot and potato.
  2. Cut onion ends and peel the skin off. Cut it into chunks.
  3. Then, cut the tomato into chunks.
  4. Take a pot, fill with a half pot of water. Allow it to boil.
  5. Place the vegetable in the water. And, turn down the heat.
  6. Let it simmer for 45 minutes.
  7. Turn off the stove.
  8. Enjoy.

Nutrition

Vitamin A: carrot gives vitamin A. Good for the eyes. Great for eyesight, reproduction, and the immune systems.

Vitamin B: potato gives vitamin B. This helps to reduce stroke, improve cell metabolism and improve energy level.

Vitamin C: vitamin c is in tomato. Vitamin C helps to repair body tissue. Therefore, some people call this soup ABC soup.

Soup

Vegetable soup has a lot of vitamins. Good for children but tomato might not be good for infants. Kids love this soup due to the sweetness of the onion. If you add corn, children would love it too. Using the slow cooker You can get stronger flavors. And, if you don’t want to constantly look after the soup, put it in the slow cooker and forget about it. Put all ingredients in the slow cooker. Allow the slow cooker to cook high for 3-4 hours or slow for 6-8 hrs. I love it when you return home the whole house smell like a home cook meal. Warm and cozy.
