Creamy Nutritious Leek Soup

Soup, creamy nutritious leek soup, I think about soup for lunch or dinner. On chilly days, when I feel exhausted or worn out, I love some comfort food. A lovely bowl favorite of soup and leek to help my immunity. The saltiness from the parmasen and kosher salt. The sweetness of the soup form the leek. Therefore, this is one of my husband’s favorite soup.

Ingredients:

3 leeks

butter 1tbsp

1 – 4 cup of chicken broth

2 russet potatoes

1 – 4 tbsp. kosher salt

1 – 5 tbsp. parmasen

1/2 cup of sour cream

salt and pepper

Instructions:

1. In a large pot, add water. Let it boil. When the water boils, put in the potatoes.

2. Once the potatoes soften, it is ready.

3. In a pan, add oil. Place leeks in the pan. Cook until soften. Place the cooked leek aside. Continue this until all the leeks are all cooked.

4. Add the leek to the pot with the potatoes. Let it simmer. Cook for 1/2 an hour.

5. Turn off the stove. Let the soup cool. After the soup cools, scoop the soup into the blender. Blend together.

Note: be careful the soup can still be hot. Make sure the lid is locked before blending.

6. Carefully, pour the puree soup back into the pot. Turn on heat on low.

7. Add in kosher salt, parmesan cheese, and sour cream. Mix to combine. Let the content simmer.

8. Then, add in salt and pepper for flavor.

9. Taste the soup to see if it needs more parmesan cheese, kosher salt, and pepper.

10. Enjoy!

Leek Soup

History of leek soup originally came from Wales. This vegetable is good for fiber and helps with the water content. Leek helps the body to feel fuller and to eat less. It curves the appetite. What this vegetable is part of the onion family. These vegetables such as shallot, onion, scallion and leek helps to reduce inflammation. Inflammation can be from body injuries from sports, and the body fighting something like infection. Do have a bowl of creamy nutritious leek soup to have a healthier body.

Building Your Immunity with Soup

I find that being a mom you are always short on time. I spend the whole day taking care of the kids but near the end of the day, I have no idea what I did all day. I know I was busy but at the same time, I felt like I have done nothing all day. I have a todo list the only thing I accomplish is one thing on my list. When I was little my Mom would always make me Chinese soup; she would make it weekly. I learned that early on when I was growing up weekly soup helps to build up your immunity. There are times when your health is not the best or when you are exhausted. There is always a soup for whatever condition you are in. Having soup regularly, I did get sick very little, I do find that when I get sick it did not take me too long to recover from my cold. Now, I find I have very little time to make Chinese soup for my family. With Chinese soup, it is best to cook the soup for four to five hours. However, I am not all the time with taking the kids to school and activities I know I had to think of another way. I use my crockpot to make soup. I can use the soup to make noodle soup or to cook with something else like soup stock. It seems like sometimes we just need to make things happen but alternately.

     Chop all the ingredients.

 

Recipe:

2 Chicken breast                                              3 onion

2 stalk celery                                                     2 carrot

1/2 bunch parsley                                             1 tsp thyme

3 slice ginger                                                       whole chicken bone

1/2 pot water

  1. Add all the ingredients. Add the water.
  2. Cook for 10 hours.               s
