Beef broth pho. Weekly, we tend to have pho a Vietnamese noodle soup dish. The rich beef bone broth with strong meaty flavor made with a combination of Vietnamese spices. Pho is a fantastic gluten-free dish that uses rice noodles. A dish to have on a cold day. Noodle soup is a wonderful comfort food item.

Pho process

The noodle soup broth is made by cooking beef bones for many days. This allows the broth to have a strong flavor. Originally, the broth was just a simple dish made by cooking the bone broth. Later on, the broth improved by adding spices to improve in flavor. Spices used in the broth are basil, cilantro, etc. They can be different depending on the area.

Ingredients

  • 1 – 2 lb short ribs

  • 4 oxtail

  • 4 bone marrow

  • 1 – 2 lb beef shank

  • 1 whole star anise

  • 1 stick of cinnamon

  • 6 pods of cardamons

  • 3 scallions

  • 1 whole nutmeg

  • 5 whole cloves

  • 5 – 10 oz of rice noodles

  • bunch of soybean sprouts

  • 10 scallions

  • 1/2 bunch of mint

  • 1/2 bunch of cilantro

  • 1/2 bunch Thai basil

  • 1 – 2lb thin sirloin steak meat

Directions

  • First cook the spices. In a frying pan, add in star anise, nutmeg, cinnamon, clove, and cardamom. This will bring out the aroma.
  • Place the spices in a bag for the soup.
  • Take the crockpot, put in scallions, bone marrows, oxtail, short rib, shank, and spice ball.
  • Pour in water to completely cover the ingredients.
  • Cook low 6 – 8 hours.
  • Once the soup is done. Use a strainer to separate the liquid from the content.
  • Bowl of soup:
  • In a small pot, pour in beef stock.
  • Once boiled add in rice noodle. Noodle should take 5 – 7 minutes. Once tender add in bean sprout and the thinly sliced meat. It should take 5 minutes.
  • Should be ready to serve.

Broth to Boost Immunity

Hearty broths are not only tasty but good for immunity. By adding lots of vegetables, the soup is full of healthy nutrition and bone broth. Bone broth is full of nutrients. There are numerous vitamins, calcium, magnesium, and phosphorous. The broth allows the body to absorb the cartilage since it has been brewing in the soup for long periods of time. Also, the broth allows the body to take in collagen. This broth is very good for the body.

Multi-purpose Whole Chicken. Being a Mom, I try to use an item in multiple ways. Along this might make life a little easier. Therefore, this might give me options. As well as that options are good. Definitely, this allows me to use the chicken in two or three different dishes. What’s next?

The multi-purpose whole chicken gets cooked in the crockpot first with spices. Then, I would use the drumstick and thigh for dinner. Not only would I shred all the meat off the bone but also use the bones. Bones gets to be used to make bone broth. Do add a chicken breast to make the soup more flavorful. Besides this it can be used for a casserole or a curry dish. Whole chicken has multiple uses.

Ingredients:

1 tbsp. rosemary

1 tbsp. thyme

1 tbsp. butter

1 tsp salt

1 tsp pepper

Instructions:

1. In a bowl, add butter, thyme, rosemary, salt, and pepper. Stir to combine.

2. Use a brush to apply the mixture all over the chicken.

Note: if there is not enough, add more spices.

3. At the bottom of the crockpot, clump together the aluminum foil like a ball. Let this elevate the chicken. Put in four foil balls.

4. Place the chicken in the crockpot. Cook for 4 hours.

5. Ready to serve.

Shredded Chicken

What to do with the shredded chicken? Furthermore, use the shredded chicken in a pasta salad. Also, add corn to make a salad. With the dressing, add olive oil, salt, pepper, and lemon juice. Mix in a glass jar. Therefore, drizzle this on top of the pasta salad. Alternately, it can be transformed into multiple dishes or multiple uses can be very handy.

Crockpot Lasagna Soup. With a busy schedule, I find I am always looking to make things easier for me. Cooking a healthy nutritious meal is very important for me, I don’t have a lot of time. Therefore, I am trying to make meals easier for myself. My children love pasta. I do enjoy multiple layers of lasagna and I can easily sneak in more vegetables. Or, anything that resembles lasagna and I can easily sneak in more vegetables. This time I decide to make crockpot lasagna soup.

Crockpot lasagna soup recipe

Ingredients:

1 lb ground beef

1 large onion(minced)

1 can 28oz crushed tomato or fresh tomatoes

1 can 14.5 oz diced tomato

32 oz low sodium beef broth

2 tsp dried basil leaves

2 tsp dried parsley

1/2 tsp seasoning salt

1/2 tsp black pepper

1/4 – 1/2 cup of parmesan cheese

optional: shred spinach

toppings: Mozzarella, ricotta, parmesan cheese

Instructions:

1. Sauté the garlic. Then, cook the onion. Add in the ground beef. Let the ground beef cook until brown. Remove the fat. Put all the rest of the ingredients in the crockpot. Add water.

2. Cook low 4 – 6 hours. Check there is enough liquid. Stir.

3. Do stir occasionally.

4. Ready to serve. Add parmesan cheese on top.

Comfort Food

Who doesn’t love lasagna? Apparently, lasagna is the 2nd household favorite dish for pasta lovers. This dish is comforting. Lovely gooey cheese with lots of layers. There are a variety of versions from vegetarian, gourmet cheese, unique sauce, and de-constructive lasagna. Why not try your own version of crockpot lasagna soup or crockpot lasagna. Ingredients:

2 pound of lean ground beef

1 medium onion

2 clove of garlic (minced)

1 cup of ketchup

1/2 cup bell pepper (remove seed and chop)

3 tbsp. Worcestershire sauce

3 tbsp. brown sugar

2 tbsp. mustard

2 tbsp. cider vinegar

Instructions:

1. In a pan, add oil to cook garlic and then the onion. Browned the ground beef.

2. Place the ground beef with garlic in the crockpot. Then, add the rest of the ingredients in the crockpot.

3. Cook for 4-6 hours on low. Make sure there is liquid or it will burn.

4. Once cooked. Take a burger bun and add it in the middle.

If you do not have burger buns, you can serve with brown rice.

1. Clean the chicken and place it in the crockpot. Fill the pot to cover the chicken.

5. Serve in a bowl with rice and shredded chicken on the top. And add a scoop of soup.

Strengthen Immunity

With the virus, it is a good idea to strengthen the body to protect the body. Bone broth is an excellent way to strengthen the body’s immunity. With every meal, do add bone broth while preparing the meal to add more nutrient. In the beginning, it might be tricky to remember but start once a day than slowly increase the amount. Or, regularly consuming nutrient-rich food is good for the body. The body can resist infection. And, the body has a bigger chance to beat the infection. Crockpot Chicken and Carb. This week has been a little chaotic. I am trying a new routine trying by entertain my kids while doing my mommy duties. Now, there are no school and no activities, it has been a lot tougher to get things done. This is where my crockpot becomes very handy. The one I have has a timer to set the amount of time needs to cook the dish. Once cooked the crockpot will switch the setting to warm. It is quite easy to use and fantastic for Moms who wants to provide a nutritious meal for the family.

Crockpot Chicken and Carb Recipe

Ingredient:

1 cup of brown rice

1 – 2 chicken breast

1/2 cup pea

1/2 cup of corn

1 tbsp. Dijon mustard

1/2 tsp garlic powder

1/2 tsp kosher salt

1 tsp dried thyme

1/4 tsp ground black pepper

2 1/2 cup chicken broth

1/2 cup plain Greek yogurt

1/4 – 1/2 cup of grated cheddar cheese

Instructions:

1. Spray the inside of the crockpot to prevent sticking. Put in the following items rice, carrot, shallot, and Dijon mustard. Mix to combine. Place chicken on the top.

2. Sprinkle garlic powder, thyme, salt, and pepper. Add in the chicken broth. Cook for 2 1/2 hours. Use a meat thermometer to check the meat is cooked.

3. Set aside the chicken on a plate and to keep it warm.

4. Stir the rice and the vegetable. Check to see if the rice and vegetables need more cooking time. If the ingredients need more time, cook for another half an hour to one hour.

5. Scoop yogurt into the crockpot. Mix the ingredients together.

6. Cut the chicken into dice size. Add in the cheese. Let it cook for another half an hour. Mix.

7. Once done. Serve on a bowl.

There are many benefits of using a crockpot. The slow cooker or crockpot cook dishes at a low temperature. Therefore, the protein will remain tender and delicious. And, the crockpot gives the meat a huge amount of flavors by slow cooking the meat. Chicken, pork or beef will be flavorful and juicy. Nothing like coming home and being welcomed by the aroma of the dinner ready in the crockpot. Also, nothing like the delicious smell of dinner throughout the house. Another positive about using a crockpot does not use a lot of electricity. Do try crockpot and carb.

My aim to make healthy nutritious meals like crockpot sweet Dijon chicken, while saving me on time. I love the idea of a freezer crockpot meal. This helps a lot on the days where you are running around a lot with kids’ activities and not much time to cook. You prepare ahead and throw it in the freezer. When I am short on time, I go to my freezer crockpot meals in the freezer. This helps with the stress level and the exhaustion.

Ingredients:

1-2 lbs of drumstick

1/4 – 1/2 cup of maple syrup

1/4 – 1/2 cup of Dijon mustard

salt and pepper

Instructions:

Freezer Preparation:

  1. In a bowl, add maple syrup, Dijon mustard, salt, and pepper.
  2. Add the chicken. Allow the sauce to coat all over the chicken.
  3. Place in a freezer bag.

Cook:

  1. Allow the items to thaw overnight.
  2. Pour the content out of the bag into the slow cooker.
  3. Cook 6 – 8 hours on low or 4 – 5 hours on high.

How to Save on Time

If you have some time, do some food preparations ahead:

  • Peel and chop carrots and place in Ziploc bag
  • Cut zucchini into chunks and place in Ziploc in the fridge (do use within 2 – 3 days)
  • Making a dish, if you need onions, prepare a day ahead of time. Prepare a day before to save on time.
  • Take the spiralizer to make vegetable noodles and store in the freezer

Food Item not store well

Certain foods do not freeze well. Eggs and dairy don’t freeze well. Items with lots of water do not store well. Lettuce, cucumber, and tomato do not freeze well. Avocado becomes brown. Uncooked potatoes do change the texture making it soft. The freezer does a lot of things but not everything can be frozen. Do try this crockpot sweet Dijon chicken.

This week I am trying crockpot honey garlic chicken. I love adding new dishes to my recipe list. I worry my children get bored with the dishes I cook regularly. Sometimes something new is always nice. What I feel I can’t live with as a Mom is my crockpot. It can be a struggle to cook with kids around. They always want to spend time with me. As a Mom, I am very happy. Unfortunately, I have trouble getting things done.

Slow Cooker Honey Garlic Chicken

1-2 lbs of drumsticks

1/4 cup honey

1/4 cup of soy sauce

2 tbsp tomato paste

1 tsp molasses

1/2 tsp oregano

4 garlic, minced

sesame seed (optional)

2 tbsp tapioca starch/ cornstarch

Instructions:

  1. Turn on the stove. Add oil. Sear the chicken to seal the juice.
  2. Place the chicken in the crockpot.
  3. In a bowl, add honey, tomato paste, soy sauce, molasses, oregano, and garlic.
  4. Pour the sauce onto the chicken.
  5. Cook high 2-3 hours or low 5-6 hours.
  6. When ready to serve, add tapioca starch with 2 tbsp. of cold water. Add to crockpot. Mix.
  7. Enjoy!

Crockpot chicken dish is gluten-free, dairy-free, and egg-free. The dish is sweet from the honey. Chicken is in small bite-size, so this makes it easy for toddlers to have. Before placing the ingredients in the crockpot, you cook all the sides of the chicken to sill the juice. The meat will be moist while being cooked in the crockpot.

Are Asian dishes healthy? The ratio of meat to vegetables is healthy? More vegetables and the amount of meat is less 3:1. According to the food chart, this is the daily recommended amount. Asian food has fewer calories.

  • marinate the meat before cooking

  • Allow the wok to become hot then add oil
  • Add starches close to the end

Time with Family

Our family does tend to eat chicken and fish more often. Chicken is easier for toddlers to eat since they do not have all their molars yet. Also, the meat texture is not as tough as beef. Therefore, it is easier to chew. Fish is very easy for children to have and the omega-3s are very good for their brain. Having fish weekly, this will give the children healthy skin.
