Mac & Cheese Snack Bites

I saw a recipe I think my children would love to eat. These mac & cheese snack bites. My children love anything with cheese. Why not these bite-size snacks to have as a snack or have it for breakfast. Their school does not want them to have sugary snacks I think these would be a nice addition with their lunches.

Ingredients:

1 cup gluten-free macrooni noodles

2 tbsp. gluten-free flour

2 tbsp. vegan butter

1 1/2 cup cheddar cheese

1/2 cup non-dairy milk

Instructions:

  1. In a small pot, add water. Let it boil.
  2. Once bubbling. Add pasta. Stir to prevent sticking. Once done. Pour into a strainer.
  3. Turn on the stove, add butter and flour. Stir.
  4. Add in milk. Mix. Then, add in the cheese. Stir constantly.
  5. Pour the macaroni in. Regularly stir the content.
  6. Spray the muffin pan.
  7. Use a spoon to scoop the macaroni and cheese into the muffin pan.
  8. Pre-heat oven 375 degrees. Sprinkle cheese on top.
  9. Bake for 10 minutes or until the pasta hardens.

Challenging

Challenging with kids, they get bored or tired of snacks. I am always looking for new ideas. They love blueberries but when they bored I need to transform them into something different. I had changed it to blueberry dipped in yogurt and frozen in the freezer. What can I do? How should I change it up? Being a mom, children love to give moms all these challenging tasks. We need to do what is impossible. And, sometimes just fix things right on the spot. Mom just needs to be super creative and do the impossible. Or, what I need to use to change it up. Do try mac & cheese snack bites.

If you like snacks, how about energy bites.  

Or, maybe I should try something like kale chips.
