Pad Thai with Zucchini Noodles. My mission for the next couple of weeks is to increase the number of vegetables into our diet. Therefore, I use zucchini to make fun crunchy noodles. The flavors of Thai cuisine are lovely with a sweet and sour mix in with spiciness. Unfortunately, my children are very sensitive to spicy food. Pad Thai with Zucchini Noodles Recipes

Ingredients:

1 – 2 lbs ham

2 tbsp. rice vinegar

one tbsp. fish sauce

1/2 tsp – 1 tbsp. lime juice

1 1/2 tbsp. honey

2 eggs

1 tbsp. peanut oil

3 – 4 garlic cloves

2 large zucchini

1 tsp cilantro

Instructions:

1. In a bowl, mix rice vinegar, fish sauce, lime juice, and honey.

2. Turn on the stove, add oil in the pan. Cook egg scramble gently.

3. Wash pan. In the pan, add oil and cook chicken. Once done set aside.

4. Saute garlic. Place zucchini in the pan. Cook for 5 minutes. Put in scallions. Cook for 2 minutes.

5. Pour in the sauce. Mix with noodles and the meat. Add in the eggs.

6. Cook for 5 – 10 minutes.

7. Ready to be served.

8. Season with salt and pepper.

Thai Cuisine

This cuisine uses a mix of meats and seafood with vegetables. What types of spices are being used? /They use garlic, pepper, and fish sauce. Chinese introduce noodles to Thailand. Therefore, the dishes are either rice or noodles. Surprisingly, Thai food is influence by Indian curries. Curries, they have are slightly different they have red, yellow, and green curries. Other spices used are Thai holy basil, lemongrass, and Thai ginger.

Thai dishes are sweet, spicy and tangy. There a combination of meat and vegetable. Do try pad Thai with zucchini noodles.

Zucchini Vegetable Chip Snacks

Zucchini Vegetable Chip Snacks. This week I want to increase more vegetables in our diet. Last week, I was increasing more fruit or probiotics to their diet. My children love to snack why not vegetable chips. Who can resist the crunchy texture? Something easy and simple for an after school snack. A dish that requires 2 – 3 ingredients. Delicious nutritious zucchini chips snacks.

Ingredients:

2 – 3 zucchini (medium to large)

1 tbsp. Italian season

1 – 2 tbsp olive oil

1 /2 cup gluten-free bread crumbs

salt and pepper

Instructions:

1. Preheat the oven to 375 degrees. Wash the zucchini. Cut the ends of the vegetables. Slice the zucchini into 1/2 inches.

2. Spray on a baking tray. Place slices of zucchini on a baking tray with spaces in between each other.

3. Take a brush to apply on oil on both sides of the zucchini.

4. Sprinkle Italian seasoning on all slices or with salt and pepper. Then, add gluten-free bread crumbs.

5. Place the tray in oven. Cook for 5 – 10 minutes. Flip onto the other side. Allow the zucchini to cook for another 5 – 10 minutes. With the thinner slices will cook faster or will easily burn. Do check often. Once done.

6. Let the chip cool.

7. Chips can be eaten alone or dip in ranch dressing.

What Chip Goes With

The chips can add texture to a sandwich. Or, eaten alone with a drizzle of melty cheese on the top. And, if you like a kick in the food, add in paprika. Sprinkle some parmesan cheese for more flavor. Gluten-free Granola Lemon Bar

My daughter loves granola bars. This time I want to make a gluten-free lemon granola bar. My aim to save money on snacks by making my own rather than buying. I want my children to have more healthy snacks. My goal for this year is to make gluten-free snacks. I can have more control over what goes into the snacks. I am going to make a gluten-free lemon granola bar.

Pros

Granola bars are convenient snacks. They are great on the go snacks. Easy snacks can be packed in a lunch bag. The bars have a good amount of protein and fiber. Healthy for the body to prevent snacking on junk food. There are many combination options for granola bars from chocolate chip to fruity or to plain ones.

Gluten-free Lemon Granola Bar Recipe

Ingredients:

1 1/4 cup of gluten-free oat flour (blend my own)

1/2 cup sliced almond(optional)

1/4 tsp salt

1/2 tsp vanilla extract

1/4 cup of honey

1 cup butter (sunflower)

zest of two lemon

1/4 cup of lemon juice

Instructions:

  1. Spray 9 x 9 bake pan.
  2. Preheat the oven to 350 degrees Fahrenheit.
  3. In a bowl, put in oats, almonds, and salt. Mix well.
  4. Add in vanilla, honey, butter, lemon zest, and lemon juice. Stir in to combine.
  5. Take a spatula and spread granola mixture into the pan. Press to flatten.
  6. Bake 20 – 23 minutes until hardened.
  7. Let it cool. Cut into bars.

Freezer Homemade Granola Bar

There are times where my children do not eat as much as I thought. Or, when I need it I don’t have time to make a granola bar. What I did is to freeze the bars, to prevent wasting food. By freezing these snacks, they do last longer. I can take them out whenever I need them. Wrap individual bars with plastic wrap. Then, place in a freezer bag. Try to remove all air out of the bag before zipping it up. Put the freezer bag in a flat part of the freezer. The granola bar needs a couple of hours to defrost. Do try making these gluten-free lemon granola bars for yourself.

Gluten-free Shortbread Cookies

This December, I wanted to give baked goods as part of a Christmas gift to others. When I think about the Christmas holiday, I think of treats: gingerbread, candy canes, shortbread cookies, etc. I love shortbread cookies. Shortbread cookies are always the first to come to my mind when I think of cookies. Shortbread cookies are high in butter; therefore, is both crumbly and tender. It is rich but very addictive. This year I am going to make gluten-free shortbread cookies.

About Shortbread

These treats are lovely. They originated in Scotland. Originally they were biscuits made from three simple ingredients white sugar, butter, and oat flour. Shortbread originated from a high percentage of butter recipe. Short is the term used when placed in both biscuits and pastries. It gives the meaning of crumbly. Therefore, this is how a shortening name came from.

Gluten-free Shortbread Cookies Recipe

Ingredients:

1-2 tbsp. maple syrup or honey

8 tbsp. coconut flour

1/2 tsp vanilla extract

4 tbsp. of butter or vegan butter

Instructions:

  1. Preheat the oven 350-degree Fahleite. Take out a baking pan. Spray pan with oil to prevent a cookie from sticking to the pan.
  2. In a small bowl, add butter and coconut flour. Blend with an electric mixer.
  3. Add maple syrup and vanilla to mixture. Mix well.
  4. Use a spoon to scoop batter on to the baking pan. Take a fork and press down.
  5. Bake for 8 – 10 minutes.
  6. Allow the cookie to slightly brown.
  7. Remove from the oven. Let it cool.

Homemade baked goods are always a lovely gift. If you have a long list to shop for, you want to stay on budget. Homemade items would help with the cost. Sometimes the cost can add up, if you need to buy for your children, significant other, siblings, parents, teachers, your children’s friends, etc. This is quite a list. Soft Vegan Eggs for Breakfast

Ol loves eggs. When I found his food sensitivity, I know I would need to reduce or eliminate eggs from his diet. My goal is to make vegan eggs for him. My daughter likes eggs but my son loves them. I did not have as much of a difficult task with my daughter. She does not need to eat them daily. My next task is to do some research. Some recipe uses a special type of flours, while others use tofu. I tried to make soft vegan eggs for breakfast.

Soft Vegan Eggs for Breakfast Recipe

Ingredient:

1 tbsp. chicken pea flour

1 tbsp. tapioca flour

1/8 tsp turmeric powder

1/3 cup non-dairy milk

1/2 tsp salt

1/8 tsp Kala Namak salt

1 tbsp. olive oil

1 pkg soft tofu

Instructions:

  1. In a bowl, add all the dry ingredients.
  2. Add oil. Mix to combine.
  3. In a bowl, cut the tofu into cubes. Add dry ingredients and milk together.
  4. In a pan, on medium heat add the mixture in the pan. flip to prevent burning. Allow the mixture to cook on all sides.

About the ingredient

Turmeric: add 1 tsp to give the yellow coloring to resemble eggs

Chickpea flour: gives a dense texture. Once you add liquid to the flour it becomes sticker. Good for baking. Use as a binder for baking.

Kala Namak Salt: Himalayan black salt. The salt adds an eggy flavor. And this spice gives the eggy smell.

Tofu: tofu gives an eggy texture. Does not fluff up

My Daughter’s Vanilla Moist Cake

My daughter’s vanilla moist cake. All she cares about is her birthday cake. She loves cream and maybe the chocolate decoration on top of the cake. Before we have the time to cut the cake she is trying to get the chocolate pieces. Kids. This time I want to make a memorable cake for her. Maybe a princess theme. I don’t have a lot of experience. This time I am trying to make my daughter’s vanilla moist cake with a cream cheese frosting.

Cake

Before I made makes, I made cupcakes which she enjoys. They can be fun. Good size for kids. It can be a little easier with someone like me who is not very experienced with cakes. I decided to venture to more of a regular cake. I love the Food network. These experienced or home baker made these amazing cakes. I am inspired to attempt at a cake. You need to start somewhere. With my daughter’s vanilla cake.

Moist Cake

Ingredients:

2 1/2 cup of all-purpose flour

1 cup of sugar

1/2 tsp baking soda

1 1/2 tsp baking powder

1 tsp salt

2/3 cup shortening

1/4 cup butter

1 cup sour cream

1/2 cup milk

6 egg whites

Instructions:

  1. Preheat oven 325-degree fahrenheit.
  2. Grease two 8inch round cake pans.
  3. In a bowl, mix sour cream, milk, vanilla, butter, and egg whites.
  4. In a separate bowl, add flour, baking soda, salt, and baking powder.
  5. Add shortening and butter. They will be in chunks. Mix with flour mixture.
  6. The mixture should be crumbly.
  7. Add in half of the liquid mixture. Combine.
  8. Mix for 10-15 minutes.
  9. Do not overbeat.
  10. Pour in cake pan.
  11. Bake 325 degree far for 45 minutes -50 minutes.
  12. Let it cool.

Cream cheese frosting

Ingredient:

1/2 cup powder sugar

1 tsp vanilla extract

8 oz cream cheese(room temperature)

1/2 cup butter(room temperature)

Instructions:

  1. Add all ingredients in a bowl.
  2. Mix to combine.

Delicious Cake

I enjoy the taste of the cake. My children decorate with pink sprinkles. They had too much fun. The appearance does not look as appealing but the cake tastes good. Not too heavy or too sweet. This is the second cake I have made. Next time, I would like to decorate the cake with cream roses. Do try my daughter’s vanilla moist cake.

I cannot rely on products from a jar or packet. Most of the time, the pre-mix items have either garlic, onion, or and sometimes two of the items. Now, my little one cannot have them. Some items on Char’s food sensitivity does not affect my cooking style since I hardly ever cook with them. However, I find it extremely difficult not including tomato or onion into my cooking. Tomato, I can use it to hide vegetable into time dish. And children love pizza and spaghetti. This is very challenging.

Home made meal

What I need to do is to prepare everything myself. No lazy days. Can’t rely on pre-mix sauce or frozen meals. I have to prepare ahead of time land be a better planner or be more organizer. I can spend some time to prepare homemade freezer meals. Maybe, I should focus more on freezer crockpot meals.

Alternative to prepare meals

Another approach, I believe is to apply a homemade rub on the chicken or meat. Then, add vegetable and other items to the dish.

Chicken Rub

Ingredients:

5 chicken thighs

rub:

1 tsp paprika powder

1 tsp dried thyme

3/4 salt

black pepper

Instructions

  1. In a bowl, mix chicken mix.
  2. Rub the spick all over the chicken.
  3. Let this sit for 1/2 hour.
  4. Turn on crockpot, place chicken in crockpot. Add water.
  5. Let chicken cook for 3 1/2 hour.

When I was little my dad owned a pizza restaurant, where I learn about American food. I had fond memories of the time I spend with my family, I was too little to help. I learned a little about restaurant life. And, I learned to make pizza and ribs.

Gluten-free Dairy-Free Egg-free Pizza Crust

Ingredient

1 tbsp honey

1 1/4 cup gluten-free flour

1 1/2 tsp yeast

3/4 tsp salt

2 tbsp olive oil

1 tsp baking powder

1 cup water

1 tbsp psyllium husk

Instruction:

  1. In a cup with warm water add yeast. Add honey. Mix well. Let the mixture sit for 10 minutes.
  2. In another bowl, add flour, salt, baking powder, and psyllium husk. Combine. Once combined, add yeast mixture.
  3. Then, add olive oil. Mix together. The batter would look like cookie dough.
  4. Take a cloth and cover the batter to let it rise. It should sit for 30 minutes.
  5. After 30 minutes, press dough into pizza pan. Let the dough rise for approximately 10 minutes.
  6. Turn the oven to 425 degree Fairinheight. Bake for 15-20 minutes. Remove from the oven.

Ingredients:

1 Pizza crust

175 g – 200 g ham

1/2 cup spinach

1/2 – 1 cup vegan cheese (cheddar or morzella)

Instructions:

  1. Take the pizza crust.
  2. Add spinach and ham all over the pizza.
  3. Spread the cheese all over the pizza.
  4. Turn oven at 375 degree Fairinheight. Place the pizza in the oven.
  5. Bake for 10-15minutes. After 15minutes. Let the pizza cool.

I enjoy having a slice of pizza; a break from everyday food. Don’t you love comfort Food? Pizza has always been mine. You can add as many toppings or as much cheese as you would like. Free to do as I like.

Daughter’s Food Sensitivity

My daughter miss pizza the most after finding out her food sensitivity. She cannot have tomato, dairy, and gluten. Unfortunately, I haven’t found a sauce recipe to replace the tomato sauce. She enjoys the gluten-free dairy-free egg-free pizza.

Do You Have Bathroom Issues

When I first become a parent, I learn it is very important to feed and watch for my child’s diaper. This points to the health of the baby. I try to get my daughter to drink more water for better digestion. However, this can be a little tricky to make plain water tasty to entice my little one. She does not understand how water by itself is quite refreshing. Char cannot have her wheat, this might have affected her digestion. Introducing gluten-free Fiber

New regime, new meal plan, this will improve issue with healthy digestion. A gluten-free fiber is known as psyllium husk. It is a laxative. What it does is to absorb the water in the gut and improve the bowel movement. Psyllium is a prebiotic, something that gives healthy probiotics to grow in the gut. Good bacteria in the digestion is very important for the immune system.

Child’s new regime

What I do the first thing in the morning is to make a cup of smoothie for my daughter. Then, I would add some psyllium husk in her smoothie. For either lunch or dinner, I can sprinkle a little in her dish. It is very important for her to have her water, so I would get her to have water with each of her meal. Also, the psyllium husk requires a good amount of water intake.

Peach and Raspberry Smoothie

Ingredients:

1/4 cup of fresh or frozen peach

1/4 cup of fresh or frozen raspberry

1 tbsp. of maple syrup

1/2-1 cup soy milk

1/2 cup coconut water

2 prune

pinch to 1/2 tsp psyllium husk

Instruction:

  1. Pour the liquid in a blender.
  2. Add all the fruits, maple syrup, and prunes.
  3. Blend the items together. If the items are not blending well or there is not enough liquid, add more liquid until everything blends together.
  4. Once everything is mix well. Pour into a glass. Sprinkle psyllium husk on top. Stir.
  5. Ready to enjoy.

Little One’s Approvable

The sweetness of the smoothie really had my daughter asking for more. The psyllium husk really helps with my child’s constipation. And, the smoothie helps with the liquid intake. You can add more coconut water to the smoothie for more water content. Do you have bathroom issues? Then, you try psyllium husk to see if it would help you. Let me know.

Gluten-free Healthy Granola Bar

Charchar recently received a blood splat test to test her food sensitivity. She had her finger pricked by the Doctor who fills a sheet with eight circles. Once we reach the three weeks I was getting anxious to see what Charchar was sensitive to. I wish she would be sensitive to gluten, not dairy, or eggs since Charchar really likes her cheese and her egg custard. I making her gluten-free healthy granola bars would help.

Results

Once the Doctor gave me the results I was a little overwhelmed with the results. I am glad to have finally found out what Charchar’s sensitivity to and be able to change what I feed her. I thought she would be sensitive to either gluten, instead of dairy or eggs but no it was more detail than what I thought. I found out she is sensitive to not only dairy, egg, wheat but twenty other food items. This was not what I thought I would find out from the blood splat test. However, it is amazing to find out the amount of detail from the test.

Food Sensitive Snack

After I found out Charchars food sensitivity I decided to go shopping to get ideas. Most snacks have one or two ingredient Charchar has a sensitivity to. It was a little frustrating. I decided to spend more time making gluten-free healthy granola bar.

Homemade Granola Bar

2 cup pitted dates

1/4 cup nut butter

1 pinch of salt

1/2 cup unsweetened coconut shred

3/4 cup of raw cashew nut

1/2 cup of walnut

Instructions:

  1. Put everything into food processor except the walnut. Once everything is combined. Add the walnut.
  2. Lined the parchment paper in to the 9 inch baking pan. Pour the mixture into the pan. Press the mixture into the pan.
  3. Refrigerate for 30 minutes.
  4. Cut with a knife into bar shape. Store in a closed container in a refrigerator.

She enjoys the new snack. The bar has a natural sweetness due to the dates. The nut gives a crunchy texture. Walnut act as a good liver support. The nut is good source of high protein diet. The granola bar is a healthy treat. These bars is a better treat or a better option.

A Bowl of Soothing Congee

This week, it has been a tough week for my whole family. My kids and I caught the flu. We were quite sick that we stayed in bed most of the time. My kids were hot with cold hands they were complaining that they were constantly cold. The kids and I were having a bad fever. They did not want to eat; the best way is a warm bowl of congee something I grew up with.

Plain Congee

Creamy Congee

1 1/2 cup jasmine rice

2 quarts chicken stock

1 quartz water

2-3 slice of ginger

2 scallion(cut thinly slice)

4 boneless chicken thigh

salt

Instructions:

  1. In a slow cooker, add rice stock, water, ginger and scallions. Cover to cook on high. Mix well. Once the rice soften. Turn down the heat.
  2. Throw in ginger. Cut up chicken thigh into slices. Turn the heat on low, add in the chicken. Cover the crockpot. Once chicken becomes cooked and it changes in color, the chicken should be ready.
  3. Season the congee with salt.
  4. Enjoy!

I love feeling warm and cozy. Congee is very comforting. When I have a sore throat or have been coughing a lot a bowl of congee is extremely soothing. On the day you don’t have any appetite congee gives your body the needed nutrient to fight a cold and to keep your body replenished.

Chocolate Chip Cookie Dairy-Free Egg Free Gluten-Free

Charchar loves her chocolate chip cookies; she the gooey chocolates. It is always a nice treat. You can dip the cookies in milk or make an ice cream sandwich with the cookie. How different would gluten-free, dairy-free, and egg-free different from a regular?

Recipe:

1/2 cup white sugar

1/2 cup coconut oil

2 tsp vanilla

1/3 cup coconut flour

1/2 tsp baking powder

1/2 cup dark chocolate chip

1/2 cup brown sugar

1/2 cup coconut milk or almond milk

3/4 cup white rice flour

2 tbsp potato starch

1/2 tsp baking soda

Instruction:

  1. In a bowl, mix together sugar and oil. Then, add in milk and vanilla. Mix together. In another bowl, combine coconut flour, baking powder, white rice flour, potato starch, and baking soda.
  2. Combine the above two together. Add in the chocolate chip.
  3. Let dough rest. It should rest for 20 minutes.
  4. Pre-heat oven 350 degree F. Grease the pan. Shape the cookies the way you like them. Roll in a ball and flatten.
  5. Put the pan in the oven. Bake for 10 minutes.

Butternut Mac Gluten-Free Dairy Free Egg-Free

Charchar loves macaroni and cheese. How different would a regular macaroni and cheese be from a no dairy, no egg, and gluten-free butternut macaroni. With Charchar’s new diet, I want to let her have her favorite dishes with the limit that she has. I am exploring various dishes with no dairy, no egg and gluten-free. It is a little tricky.

Recipe:

Ingredient:

1 1/2 butternut squash 16oz pkg pasta noodle

1/4 cup raw cashew 1tbsp lemon juice

1 tsp Dijon mustard 1/4 tsp black pepper

1/8 tsp turmeric 1/2 large onion

1/4 liquid from the cooking noodle 1tsp salt

1/4 tsp garlic pwd 1/8 tsp smoked paprika

1/8 tsp nutmeg

Instruction:

  1. In a medium pot, add water. Once the water boils. Add butternut squash and onion. Cook on medium heat.
  2. In another pot, boil water to cook noodle. Keep the cooking liquid for later once the noodle is done.
  3. In a bowl, add lemon juice, salt, garlic powder, black pepper, paprika, turmeric, and nutmeg. Mix together. In a blender, blend cashew. Add liquid from cooking liquid. Mix together.
  4. Add butternut squash and pasta noodle. Mix together.
  5. Add salt and pepper.

Comparison

Butternut macaroni is definitely different from the macaroni and cheese I am used to. The onion and the butternut squash makes the dish sweet compared to the salty flavor from the cheddar cheese. The turmeric spice gives the pasta the yellow coloring.

Charchar enjoys the sweetness from the butternut pasta. It is great to add more vegetable in my daughter’s diet. Nothing like adding extra nutrient to a child’s diet.

Homemade Yogart Gluten-free and Vegan

My daughter can be a fussy eater. The most challenging part with Char is her being on a gluten-free, no egg, no dairy diet is that she can be a picky eater. There are times where she is set in her ways and would not like to try anything new. However, I want her to have enough nutrient.

I bought a couple of different soy base dairy-free yogurt for Charchar to try, but she didn’t like any of the flavor or the yogurt. I didn’t want to keep on purchasing dairy-free yogurt; it can get quite costly especially since it would probably take a while to find ones Charchar likes. I decided to make my own.

Homemade Yogart Gluten-free and Vegan

Ingredient:

1 can coconut cream 14oz kids probiotic capsule

Instruction:

  1. Open a can of coconut cream put in a glass jar.
  2. Break open the two capsules and add to the coconut cream. Stir.
  3. Cover the glass jar with a cheese cloth secure with elastic band.
  4. Let this sit in a warm area for 24-48 hours.
  5. After the 24 or 48 hours. Refridgerate.
  6. To serve yogart, scoop a couple of spoons of the yogart into a bowl. Add vanilla extract and drizzle with honey. Add almond milk to the yogart and mix. If you like the yogart thick you would add a little almond milk, but if you like less thick add more almond milk.

I gave Char the yogurt. Surprisingly, she really enjoys the yogurt; she like the creamy texture of the yogurt. I was a little worried at first. Now, I can experiment with different flavors to see what my daughter likes.
