  2. Warm coconut oil in a microwave for 15 seconds.
  3. In a bowl, mix sugar, honey, and coconut oil.
  4. Split the mixture into 3 portions in 3 containers.
  5. Ready to be used.

Ingredients:

1/4 cup organic aloe vera

2 tbsp. coconut oil

Instructions:

  1. In a bowl, put in aloe vera.
  2. Then, add coconut oil. Mix well.
  3. Once combined. Scoop in a jar.

3 tbsp. organic virgin coconut oil

20 drops of jojoba oil

My Mom’s Family Favorite Mango Pudding

Ingredients:

1 Canned Mango Pulp 30oz

Sugar 310ml

1 whipping cream half and half 450ml

knox gelatine or Agar agar 4 pack

3 bowl of water

Instructions:

  1. In a bowl of cold water add knox. Stir to allow it to melt.
  2. In a pot, boil water. Pour in the sugar. Allow the sugar to melt.
  3. In a separate bowl, pour in cream and mango pulp. Mix well.
  4. Pour the water with melted gelatin into mango mixture. Then, add sugar mixture.
  5. Lastly, add fresh mango chunks.
  6. Refrigerate. Allow the mango to set for the whole night.
  7. Ready when the pudding solidifies.

Lately, the weather has been getting hotter. Summer is definitely here. To me, summer is all about cold dessert and delicious fresh fruits. My kids love their treats namely ice cream. They love flavors like vanilla, chocolate and strawberry flavors. I have been purchasing these dairy-free gluten-free ice cream treats regularly sometimes as a bribe or sometimes as a reward. Then, one day a thought came to me why don’t I get an ice cream maker to make cold dessert for the kids. I would be able to make gluten-free Dairy-free Ice cream treats regularly.

Dairy-free strawberry ice cream

Ingredient:

3 cup of strawberry (frozen or fresh)

1 (15oz) coconut milk full fat

1/3 cup honey

Equipment:

Ninja Chef Countertop blender with 1500 watt

Instructions:

  1. Add all the ingredients in the blender. Blend together.

Vegan Vanilla Ice cream

Ingredients:

1/2 cup medjool dates

2 can full fat coconut milk

1/2 tsp sea salt

2 tbsp. maple syrup

1 dash cinnamon

1 tbsp. vanilla

Gluten-free Dairy-free Ice cream

Instructions:

  1. Put all the ingredients into a blender. Turn to ice cream setting on Ninja blender. Once the blender count down the amount of time require to make the ice cream.
  2. The ice cream is done.
  3. Place in the fridge to freeze.

Note: Need to take out the ice cream for 10-30minutes in room temperature or refridgerator to allow it to soften. Or, the ice cream will be very icy.

How to make ice cream fun:

-Add colorful sprinkles on top

-Add some spice like cinnamon, nutmeg, clove and pumpkin spice

I cannot rely on products from a jar or packet. Most of the time, the pre-mix items have either garlic, onion, or and sometimes two of the items. Now, my little one cannot have them. Some items on Char’s food sensitivity does not affect my cooking style since I hardly ever cook with them. However, I find it extremely difficult not including tomato or onion into my cooking. Tomato, I can use it to hide vegetable into time dish. And children love pizza and spaghetti. This is very challenging.

Home made meal

What I need to do is to prepare everything myself. No lazy days. Can’t rely on pre-mix sauce or frozen meals. I have to prepare ahead of time land be a better planner or be more organizer. I can spend some time to prepare homemade freezer meals. Maybe, I should focus more on freezer crockpot meals.

Alternative to prepare meals

Another approach, I believe is to apply a homemade rub on the chicken or meat. Then, add vegetable and other items to the dish.

Chicken Rub

Ingredients:

5 chicken thighs

rub:

1 tsp paprika powder

1 tsp dried thyme

3/4 salt

black pepper

Instructions

  1. In a bowl, mix chicken mix.
  2. Rub the spick all over the chicken.
  3. Let this sit for 1/2 hour.
  4. Turn on crockpot, place chicken in crockpot. Add water.
  5. Let chicken cook for 3 1/2 hour.

This item has anti-bacterial and anti-inflammatory properties. What honey can be used for is to heal wounds. The sugary product is good to strengthen the immune system. Therefore, honey and lemon are wonderful for a sore throat or a cold. Honey can be used for burns.

What to do with this product:

This can be applied to area of the skin with eczema. This natural product will hydrate and protect skin from any infection.

What to beware of?

Need to be careful with soap for every day baths. Soap can be quite tough on the skin. Soap is alkaline while the skin has an acid base. It is best to use a more natural soap. Or, soap that is gentle on the skin or are fragrance-free. Avoid anything with harsh chemicals.

  • Apply moisturizer like an oil on the area after a bath and apply a layer of Vaseline on top to trap moisture
